Very tasty and very easy to make. I made the recipe exactly as written. I think the true secret to this recipe is that quality of the apples used. My apples were pretty good, but I think if they were freshly picked from an orchard it would be better.

I've tried many recipes out there. These were golden and crisp...but not too crisp. And the batter is so fluffy. Beating the egg whites take extra time, but it is so worth it. I did add vanilla flavoring (I do that to anything I bake anyway). Plus I did add a pinch of cinnamon and grated nutmeg, not enough to overpower the waffle, but just to deepen the taste experience since my waffle syrup isn't the best. With young kids who drown their waffles in syrup, I don't buy the real maple syrup often. If I had a good maple syrup I might not add the cinnamon and nutmeg. However, we will make this recipe at least twice a month if not more.

I don't have much experience with true curry dishes so I don't have much to base off of previous dishes I have made. Still, my husband enjoyed the flavor and we will make this again. This makes a lot of food and a lot of sauce. I wish the sauce was a bit thicker, but I can work that out. This was also a dish that we just kept eating and eating...bowlfuls and bowlfuls were consumed. My 3 year old son liked this a lot too. So it can appeal to a lot of ages.
