I've made this recipe way too many times. It's become my go-to breakfast gravy. Yes, you can use whatever sausage or milk you want, but I like it best as posted. (I can't find maple sausage where I live any longer but when I'm back East, this is what I make my hosts for breakfast at least once a visit.) Commit this recipe to memory.

Everyone I fed these to really liked them. As did I. I've been trying to get more veggies on the grill (other than my default zucchini) and will definitely make this again.

Loved these. The recipe reminds me of the potato pancakes a German friend used to make for me (this was before I realized that if I wanted something specific to eat, I could just make it for myself--yes, I was young and stupid). For the first course, I dot them with hot sauce. For dessert, slather them with applesauce. If I have the time, I'll soak the shredded potatoes in water, drain and give 'em a whirl in the salad spinner. Thanks for the recipe.
