Blue Cheese Waldorf Salad

We enjoyed this salad very much. My husband could not quit eating it. I had to find a container and quickly put some away for lunch the next day. It was even better then as the blue cheese blended more. We will be enjoying this as a regular salad soon. Make sure you toast the walnuts as it makes a big difference and don't leave out the kick of the cayenne pepper. The salad has lots of healthy ingredients for you also so enjoy.

Corned Beef Roast

Excellent. This is supposed to rest before cutting but my husband could not keep his hands off it and ate 1/4 of it before he let it rest and cut. The recipe is great just the way it is. No extra salt. I cooked it for 4 hours at 350 and it was so tender. I added the carrots/potatoes/onion during the last 1 1/2 hours. I think I will have to go out and buy another brisket tomorrow so we have some left for sandwiches. I bought some rye bread and swiss cheese but we didn't have any left for sandwiches tomorrow.

Espresso Bark

Good expresso chocolate. I used ghirardelli chocolate and hazelnut coffee beans that I chopped coursely. Use good chocolate. I made two batches as I had to give these as Christmas gifts. The first I melted white chocolate chips and swirled it in. The second batch I used chopped white chocolate and put them in rows to cut in pieces. I let these set up but before they were form I scored them with a knife and they were easy to break into pieces after they were dry. I wrapped small packages in saran wrap and tied with ribbons. My coffee lovers will love this. Great with a bottle of cabernat to go with the expresso bark. Store in the frig or freezer. What a nice Christmas gift.

Roasted Garlic Lemon Broccoli

Vegetables are great roasted. Make sure you only cook until tender crisp for the least amount of time. I baked this for less than 10 minutes and it was great. It was even great the next day and the lemon blended great.

Wisconsin Native's Beer Cheese Soup

My family was very hungry for beer cheese soup so tried the recipe. We enjoyed it very much but some thought the beer taste was a little too strong so I will make again but cut the beer in half next time. Maybe the cook just has to drink the other portion while making the soup. Very rich though but good. I did make mine with all milk as I was trying to cut calories a little with all the cheese but that is what cheese soup is.

Margarita Grilled Shrimp

This recipe ROCKS. I marinated big prawns to do a trial run with this recipe. It was outstanding. This will be our Christmas dinner this year. I wanted to try the recipe out before an important holiday but don't fear trying it out. It is wonderful and we can't wait for Christmas. I served this with lemon couscous and fresh asparagus and it was perfect.

Oatmeal Crispies I

WOW, are these cookies good cookies or what! I made the dough,put it in the freezer a week ago and finally had the chance to make a roll. I love icebox cookies and these are tops. They baked up nice and crisp and the flavor is wonderful. I used butter Crisco for the shortening and doubled the recipe which I am so glad I did. I took 1/2 of the cookies to the new neighbors and my husband can't stop eating the rest. I will be baking another roll tomorrow and will also be making more dough to have on hand in the freezer for nice hot and crisp cookies to be proud of and to serve to company at any time. Thank you for the great recipe. It will be at the top of our family cookie recipes.

Apple Squares

Very good simple recipe. Baked 2 of these before work today and took one to the office and one to my husband's office. Great reviews. Several asked for the recipe. I drizzled with a little caramel frosting (on this site) on the top and then also took a tub of CoolWhip for those that wanted that also on their warm dessert. Not necessary but they sure loved it. Easy to make and enjoyed by all.

Chicken Noodle Casserole

Good Minnesota Casserole. Just good home cooking. I have to say that I "appreciate" finally someone giving us what a serving is in a recipe. Now I know that I can have 1 cup for a serving for 343 calories. Usually it say 8 serving and 200 calories but how much is a serving. Thank you so much for this. Please, when you put on recipes, tell us what a serving is; 1/2 cup, 1 cup, 2 cups, etc. Thank you.

Bacon and Balsamic Glazed Sugar Snap Peas

Yum! I love snap peas. I also love balsamic so I knew this was a match. I used fresh snap peas but had to use Splenda as I can't have sugar but it turned out wonderful and less calories also. I pre-cooked my bacon crispy so didn't use the bacon grease but just a tablespoon of olive oil to fry the beans in. Great recipe.

Grilled Portobello Mushrooms

Love these mushrooms. I took to work to our breakroom and heated one up for lunch with some vegetables. They went crazy. Thought I was having steak for lunch and the smell was amazing. Wonderful on a bun also in place of a burger. Dress it up, dress it down, it is great.

A-Number-1 Banana Cake

Excellent. Yum. Perfection. Made as listed. Put on a cream cheese frosting, sprinkled the nuts on top instead of in the cake batter. Then everyone knows there are nuts and if they don't like, take them off. Very moist and delicious. Make sure you store in the frig if they don't disappear immediately because of the cream cheese frosting if you make that which I strongly recommend.

Health Dynamics Rye Bread

Very heavy 100% rye bread. It did not raise and my yeast was good. We could not eat it. I hated to throw it away but crumbled it up and put it in the freezer for bread crumbs. I will go back to my other bread recipe with some flour in it as you need some gluten to make it raise.

Chinese Broccoli Slaw

Enjoyable salad. I made 1/2 of the dressing and it was still a lot of dressing. I did not use the butter but 1 tbsp. of sesame oil instead of butter & put it in a large fry pan on medium heat for 5 minutes. Also used olive oil in the dressing instead of veg. oil. It made it a bit more healthy. I used the seasoning packet in the beef ramen noodles and low-sodium soy sauce in the dressing. I only used one packet of noodles as there was plenty and I wanted to taste the vegetables and keep the calories down. I make a similar salad with regular coleslaw but I really enjoyed the broccoli slaw for a change and will be making this often.

Brownie Frosting

This is our favorite brownie frosting recipe. I have been making this all my life but I usually use brown sugar instead of white. Nice flavor. Make sure that you do not cook anymore than the stated time or less or it gets hard and grainy. Use chocolate chips. I usually use Ghiradardelli chips

Slow Cooker Chicken Taco Soup

Threw it all in the crockpot, turned it on high and left the house for 4 hours, came home to a wonderful easy dinner. I didn't use the beer but used a can of V-8, 1 can of tomatoes w/chilies (plenty of heat) and 2 cans of diced tomatoes instead of tomato sauce. I also added 3 cloves of diced fresh garlic. The smell was wonderful and the flavors were explosive. Glad we had leftovers as it should be better tomorrow.

Crispy Barbequed Tofu Slices

Enjoyable meatless dish. I have only been using tofu for about 6 months so I am having fun experimenting. I tried this 20 other times and always threw it out but this recipe is good and I will eat tofu this way again. You really have to drain tofu well (at least an hour pressed) and then the baking of the tofu is a wonderful idea. I will always use that tip when I work with tofu. Thanks so much for the idea Amy. This is a time consuming but was nice and I will be using this recipe often.

Quinoa with Mushrooms

I love quinoa and this rocks. You can use this as a compliment dish or use it as a main meatless dish. I served with orange fish and it was great. I will eat the quinoa as my lunch tomorrow as a meatless lunch. Yum!

Lemon-Orange Orange Roughy

Explosive taste buds. This was very healthy and very tasty. I didn't have an orange so I used 2 Tbsp. orange concentrate. I put the lemon pepper on the fillets and let them set for 10 minutes and then fried in a little bit of olive oil on med/high. After browning both sides, I put on the lemon/orange sauce and cooked on medium to reduce the liquid. It was so excellent and I served it with quinoa/mushroom dish from this site. The fish had a beautiful orange glaze on it. They complimented each other so well. One of my favorite healthy dinners!
