Salmon Chowder

We really enjoyed this chowder. I used fresh leftover salmon in this and left out the cheddar cheese to reduce the fat and calories. We did not miss the cheese and it was very yummy. The chowder was nice and thick without it also.

Hash Brown Casserole II

This is also one of our families favorite go-to recipes. I sometimes use cream of mushroom soup instead of cream of chicken if I don't have it and it works well also. This goes so nice with about everything and something you can put together before dinner. It keeps well in the frig for about a week or I freeze in smaller dishes for just the two of us. The cornflakes on the top is a must.

Chocolate Eclair Dessert

Every time I make this it get rave reviews and am asked for the recipe. I tell them to go to all recipes.com. I change the puddings every time and always use a home made chocolate frosting recipe which ware on this site. This time I used cream cheese pudding. The time before I used chocolate pudding and cinnamon Graham crackers. I love chocolate and cinnamon. It is just fun to play with and always enjoyed from seniors to children. I garnish with different chips/toffee chips/nuts. Always fun and good.

Homemade Butter

So fun to make. I too had some heavy whipping cream that was at its expiration date so thought I might as well give it a try. I used my Kitchen Aide Mixer and put it on medium until it started to thicken and then put on high and let it go. It changed from cream to butter very quickly at the end. I heard the mixer slow down and heard the water splattering. Yup, it was a mess. I had buttermilk all over the cupboards/counter/appliances/etc. Next time I will try it in the food processor or blender. I had almost a full quart of cream and it made about 1 1/2 c. butter and 1 1/2 c. buttermilk. I am going to cook something with the buttermilk also. I just squeezed my butter with my hands to get out all the buttermilk and it turned out great. I will be doing this soon. FUN and MESSY but worth it.

Sausage Oyster Dressing

If you like oysters, this is the bomb. My family always request this when I make dressing. I cut up my oysters with a scissors so they are not so big. I usually have to use canned oysters in this as we do not get fresh oysters in our area very often. I do not use 2 pkg. of sausage as that is too much for us but otherwise, I do follow the recipe. If using unseasoned bread crumbs, I add 1 teaspoon of sage OR poultry seasoning. If I have fresh sage I use a tablespoon of diced fresh sage instead of dry. When making dressing I make an oyster dressing and also a plain dressing without the oysters for those that do not like oysters. You can use the same recipe and leave out the oysters. Very good stuffing.

Quick Quiche

Very easy and quick. I make this for breakfast,lunch or dinner. I use the base of this with eggs/milk/flour/butter (process this in the blender) and then change the other ingredients often. Example: sausages,bacon, or crab, fresh diced tomatoes, green peppers, onion, red peppers, spinach, asparagus, etc. There are so many ways to change it to your family's likings. Tonight it is for dinner with diced cooked sausage links, onion, peppers, fresh diced tomatoes and cheddar cheese. I topped it off with a little Parmesan cheese for a little crunch to enhance the tomatoes. I also use fresh herbs in this dish. It does make a little crust on its own with the flour. Serve some fresh fruit and muffins and it is a nice meal anytime. It freezes quite well also. Cut individual pieces and heat in microwave for a quick breakfast.

Becky's Chicken Salad

The mayo/cream made a great dressing. It was creamy with a little sweetness without adding sugar. I didn't have grapes tonight so added 1/4 c of chopped sweet onion and 1/4 c. chopped green pepper and 1/2 c. of Craisins. I used chopped pecans instead of almonds as that is what I was hungry for. I have made this several times before and always change the ingredients but use the mayo/cream dressing. Use your imagination. I served fresh fruit on the side and baguette bread.

Fried Dill Pickles

I was introduced to these at the Pickle Factory Restaurant Bar at Pepin WI. It is located on Lake Pepin on the Mississippi River and is at a wharf area. Of course they are famous for the Fried Dill Pickles. It is a cool popular place if you every get to Wisconsin. I crave these and this is a great recipe. Not the healthiest so that is the 4 star but sometimes we eat things not too healthy. I do like some panko crumbs mixed in with this (1/2 c.). It seems lighter and a different batter. They serve it with Ranch Dressing but I am going to play with a little hot sauce in it. Now I can make these at home and not have to drive 500 miles.

Chicken Enchiladas II

Love this recipe. I always get compliments when I serve this and request for the recipe. I cook a large chicken breast in a slow cooker with taco seasoning until it falls apart and then I shred it. Double the sauce so it does not get dry and always use corn and not flour tortillas. One of our favorite Mexican recipes.

Mother-In-Law Eggs

This recipe is closest to our family recipe. I have tried many other deviled egg recipes on this site but my family likes the traditional plain eggs. I use 1/4 c. mayonnaise instead of 2 tbsp. as we like it creamier. I do not use hot mustard in this as family does not like it. I used a pastry blender to break up the yolk which made it very smooth. When you pipe the filling in, it looks so pretty and the addition of the sliced olive on top always brings an "Oh, these are so gorgeous". If you don't have an egg plate, I lay these on a bed of shredded lettuce which makes it pretty. Make lots as they go fast.

Cheddar Bay Biscuits

Good fluffy white frosting. This better known as"7-Minute" frosting as you usually beat if for 7 minutes. This does not keep so you should eat it within a day.

Hash Brown Quiche

This my go-to weekend brunch casserole. I use a whole bag of a 2# bag of hash browns and put it in a 8x10 glass pan. I put drizzle the 1/3 c. melted butter and mix in 2 tbsp. dried onion. Bake for 20 min. Mix 6 eggs w/1 cup of 1/2 & 1/2 cream and salt/pepper. Pour over the hash browns and top with cheese. I vary the cheeses from cheddar/MonterreyJack/Parmesan blend, etc. It if a nice basic recipe and you can put in colored peppers or fresh chives. Bake 350 for 25-30 minutes. This freezes well also. I put in individual servings and take them out for quick breakfast. Great recipe.

Smoked Oyster Spread

If you like smoked oysters, you must give it a try. I used 3 can's of oysters and 1 -8 oz. light pkg. cream cheese and left the other ingredients as listed. They ate it all. If you don't like smoked oysters, pass on it but we love them. Thanks.

Sweet Dinner Rolls

Excellent! This made 20 large light and airy crescent rolls. Everyone said these are to die for and with only 8 guests, they disappeared instantly. Our family will be enjoying these again soon.

Cream Cheese Frosting II

Nice creamy frosting. I did add a little whipping cream to it also (1/4 cup). It was nice and creamy and rich. I piped it out on top of cupcakes and it worked well. It makes a lot of frosting. I frosted 24 cupcakes and still had 1/2 of it left after piping it on. It keeps well so plan to use the rest within a week.

Oriental Chicken Salad

Excellent as written. I did use Splenda instead of sugar and olive oil instead of veg. oil & low sodium soy sauce because of my diet. Everyone raves about this one. I do use peapods instead of peas for a change. You can change it with adding mandarin oranges also. I mix up smaller containers of the salads and leave the dressing off until serving and take these to work and it is wonderful. The dressing rocks.

Toffee Bars by EAGLE BRAND®

I followed the recipe to a T and this is not something I will make again. I lined the pan with tin foil and also sprayed the foil and they are a mess to get out. They are very rich and almost like candy bars but too rich for me. The 7 layer bars are so much better and I felt this was a waste of ingredients. Sorry.

Brownie Mallow Bars

Outstanding and Easy. I took some to the office and they begged for more and my grandchildren fought over them. You can't go wrong with peanut butter/chocolate/marshmallows. The crunch of the rice cereal made it like a candy bar. Make sure you don't cut these too big as they are rich. Refrigerate until set but cut before getting too hard as the topping gets thick and hard to cut. They will disappear fast.
