Easy Tuna Casserole

Reviewed: Feb. 12, 2012
Wow I really hate when people go off about other people making changes and giving a rating because I, for one, enjoy reading the changes and suggestions of others, and altering to my taste. This recipe was not very good as written, and could be much better. I can't wait to modify this next time. That is all.

Slow Cooker Enchiladas

Reviewed: Feb. 8, 2012
The corn tortillas turned out spongy in the middle, and hard and chewy on the edges. Not enough meat, not enough tortillas, there was a lot of soup/cheese mixture for the amounts of meat and tortillas used. Would have been better with flour tortillas and some canned or frozen corn to give it a crunch texture of some sort since everything in this is soft. I recommend BURRITO PIE from this site over this any day.

Classic Texas Caviar

Reviewed: Jan. 1, 2012
Not as tasty as I had hoped. I usually make Poor Man's Caviar by FAIRBORN on this site and I will continue to use that recipe. I sub Rotel for the tomatoes in both recipes, which adds flavor. I think I prefer the other recipe because the flavors are much more complex, the green onions, franks hot sauce, avocado, and oil and vinegar pairs perfectly with tortilla chips. It also calls for black beans instead of black eyed peas, which I also prefer.

Chipotle Mayo Relish

Reviewed: Nov. 2, 2011
Did not care for this. Everyone preferred the sauce that came with the Quick and Easy Fish Tacos recipe from this site. This was too spicy for us and too much mayo. I think it needs sour cream in addition to the mayo.

Quick and Easy Fish Tacos

I used store bought taco shells, a bag of coleslaw mix, and Mrs. Pauls battered fillets. Topped with store bought pico de gallo and the sauce from this recipe. I doubted the sauce would be any good because it sounded gross, but it was awesome! Tastes like a spicy Big Mac sauce, or special sauce. I made the sauce with Kraft Tartar Sauce and store brand restaraunt style medium salsa. It was fantastic!!! Our newest favorite!!!!!

Swiss Chicken Casserole I

Reviewed: Nov. 2, 2011
Excellent dish! The chicken was very tender. The dish was a bit too salty for me, and I love love love salt. Next time I may try to shake some of the salty flavoring out of the stuffing mix by putting it in a colander over the sink and letting it fall through the holes into the sink...I will make this again and often!

Philly Cheese Steak Pizza

Reviewed: Nov. 2, 2011
Excellent! I did substitute Pillsbury pizza crust as opposed to the crescents, and 1 package of precooked fajita steak found by the hot dogs. The chunks of steak are a little large so I shred them up a little more to spread farther. Will make this again :)

So easy and tastes great with a Thanksgiving or Christmas dinner. I make orange & cherry for Thanksgiving, and lime & cherry for Christmas, slicing and laying out on a platter in alternating colors. Enjoy!

New Wife Tuna Salad

Been making this for over a year now. I will never make tuna salad any other way. I leave out the celery seed for my partner's sake. This recipe is perfect!!! Flavor does get even better the next day, if we have any left that is!

Oven-Fried Pork Chops

Reviewed: Jul. 14, 2011
Very delicious and UNIQUE way to make pork chops! I. Am disturbed that so many people substituted bread crumbs and missed out on the crunchy flavorful coating. So be sure to use STUFFING MIX :) I used chicken flavored stuffing, ran it through my food chopper to make it less course. No egg so I soaked chops briefly in milk seasoned with garlic powder, s&p. Cooked on my aerrated pizza pan and sprayed both sides with cooking spray. Thank you for this change of pace, or taste rather, from the usual ol' boring breadcrumbs!

Hamburger Vegetable Soup

Reviewed: Dec. 13, 2010
5 stars if you keep the pasta separate until serving time. Otherwise it gets mushy. Since it got mushy the next day I added a can of diced potatoes and it was even better. I made again tonight and used white rice instead of pasta, adding as much or as little as we liked to our individual bowls. The original amount of pasta the recipe calls for is not enough for this large pot of soup in our opinions. So fast and easy!

Italian Spaghetti Sauce with Meatballs

Reviewed: Jul. 20, 2010
I made this over a year ago and had no desire to make it again until now. Although both times I thought it was good, next time I think I will cut down on the breadcrumbs as the meatballs were a little too dry and bready. I will also brown the meatballs before dropping into the sauce, either in a skillet or in the oven. The carmelization on the meatballs from browning will add flavor to the sauce (says Rachael Ray) LOL. I think that will also cut down on grease in the sauce. The sauce is acidic as some have said and I'm not sure how to remedy that. Might try draining the tomatoes and adding beef broth instead. I look forward to making again with these changes.

Amazing Chicken

Reviewed: Feb. 12, 2010
Try this similar recipe from this site instead, Garlic Chicken submitted by Carol. It is similar, but much more flavorful and healthier. It also uses bread crumbs, but mixed with parmesan cheese and it uses garlic infused olive oil in place of the mayo. This recipe was not amazing, it just tasted like chicken with soggy breadcrumbs on it, because you can't taste the mayo. Trust me: Garlic Chicken!
