Cucumber and Avocado Sushi

This is Maki, not sushi. Sushi is fish on rice, Maki is a roll. :)

Sushi Roll

Reviewed: Sep. 26, 2008
Cute idea but I thought I would note, this is not Sushi, This is Maki, Sushi is fish (raw or not) on rice, Maki is the name of the nori wrapped roll. We have been making Maki in my (half Japanese) family for years and for all the interesting ways you can cusomise it, why pay $12 for it? Thank you! this is a great inexpensive way to enjoy something wonderful and (depending on what you fill it with) healthy!

Cheese Souffles

You need a few bowls for this but MAN is it worth it! I used Butter baby Swiss I got from FIGI's and ohhhhhh it's perfect! Just remember to carefully temper your egg yolks before adding to the hot mixture and it's an easy success. Everyone loved it. I am going to do it again, this time, half cheddar, half Swiss. or perhaps Butterkase MMM! Thanks for an easy and great recipe. I have enver made a souffle' before and this gives me confidence to try more! Thank you!!!

Plain Caramel Apples

Reviewed: Oct. 24, 2007
This is a great recipe; I did do one thing differently... I wrapped each apple in paper towels after putting the wood stick in it, then put them in a big gallon freezer bag and stuck them in the freezer for an hour first. When I dipped the apples in the caramel, I made sure there was no condensation on the outside of the apple (hence I wrapped them in the paper towels) and the caramel stuck to the apple better, I didn't have so much runoff and the caramel set faster. Makes less of a puddle around the bottom. if you do this, it's harder to put sprinkles on it as the caramel sets faster but I suppose if you had a plate of whatever you wanted on the outside right next to the stove, that may be easier\faster. But this is just what I did. :)

I am munching on one now...OMG.. I put a teeny bit of icing drizzle on it, threw in some toasted walnuts, white chocolate chips , a 1/4 c oatmeal and 1/2 cranberries...my kids ate 5 a piece. There is no squashy taste at all. not that it's bad-I love squash) All in all, this recipe ROCKS! Think I might make them in Muffin top cups. ok, enough typing, must eat another one...

Cream Wafers

Reviewed: Jan. 2, 2007
A Very unusual texture at first (meaning the wafers) but then there is a light, creamy and buttery taste that blends so well with the sweet filling... Delicate! be sure to handle the wafers with care, if you wait 3 minutes after removing from the oven (best on parchment paper) they get crispy and firm enough to handle, don't even TRY before that!! The wafers seem to morph from buttery delicate circles to crispy, light delicacies... Definitely not for the heavy handed baker...

Marinated Mushrooms

Reviewed: Dec. 22, 2006
EXCELLENT! I actually steamed asparagus and threw them in too. :) Mind you, the mushrooms Shrink down like crazy so I used 4 lbs to feed 20 people apetizers. I used a shallots versus the onion as it was a bit oniony for me, don't use the yellow onion or you'll be knocking people over when you say "hi". All in all an EXCELLENT RECIPE! I loved the flavour so much, I used ot over alternating slices of cream and cheddar cheese to make marinated cheese. TRY IT! it's great...then pop an altoid. BRAVA~ 5*'s

Grandma Ople's Apple Pie

Reviewed: Dec. 14, 2006
PERFECT! I used apple pie spice (you can get it already put together in a shaker)I used about a tablespoon for a really spicy pie! I cooked it in a stoneware deep pie dish...mmmmmmmm WOW, this is truly a DANG GOOD PIE! I brought it to a company potluck today, I am staring at an empty pie dish right now and thought it was only fair that the recipe got a rating asap! I got SOO many compliments! Thank you!

Downeast Maine Pumpkin Bread

Reviewed: Dec. 6, 2006
OMG this is the EASIEST recipe! it bakes up PERFECT. At first I was a little skeptical about the texture when I first took the loaves from the pan but I followed the advice of "leave it for a day" and WHAT A DIFFERENCE A DAY MAKES! it transforms this bread into a luscious, moist and wonderful spicy-sweet dream! I added some white chocolate chips and chopped pecans, that added some GREAT texture but also made a batch of it, as is, WOW! I also Added Pumpkin Pie spice, two heaping teaspoonfuls,I think it added a better aroma and flavour. I also added a half a teaspoon of almond Extract. HEAVEN! The last batch ( I made 3) I used Butter flavoured Crisco as I ran out of oil...it was a stiffer batter but the bread turned out just as wonderful! I used Walnut oil in the other batches, and wow, it adds a walnutty essence that is magical! Try it! All in all, you CAN'T go wrong! This is definitely the best pumpkin bread recipe ever! easy and perfect! Try it, following the directions as written, and you'll be delighted! ** I just came back from Xmas Vacation and got accosted by two coworkers wanting the recipe! A coworker's wife made this recipe and called me at home to thank me for passing this on.... MAKE this, if you enver make any other holiday bread, ever...Make this one!

Japanese Green Tea Petits Fours

Reviewed: Jul. 3, 2006
Actually, the tea is called Maccha. I used an almond tea cake recipe and used the marzipan. You have to use a really good quality tea powder. All in all, this is a good idea but, maybe with a different recipe. My Japanese family liked the almond cake version. I give 2 stars for the idea! Thanks!
