OMG this is the EASIEST recipe! it bakes up PERFECT. At first I was a little skeptical about the texture when I first took the loaves from the pan but I followed the advice of "leave it for a day" and WHAT A DIFFERENCE A DAY MAKES! it transforms this bread into a luscious, moist and wonderful spicy-sweet dream!
I added some white chocolate chips and chopped pecans, that added some GREAT texture but also made a batch of it, as is, WOW! I also Added Pumpkin Pie spice, two heaping teaspoonfuls,I think it added a better aroma and flavour. I also added a half a teaspoon of almond Extract. HEAVEN!
The last batch ( I made 3) I used Butter flavoured Crisco as I ran out of oil...it was a stiffer batter but the bread turned out just as wonderful! I used Walnut oil in the other batches, and wow, it adds a walnutty essence that is magical! Try it!
All in all, you CAN'T go wrong! This is definitely the best pumpkin bread recipe ever! easy and perfect! Try it, following the directions as written, and you'll be delighted!

MAKE this, if you enver make any other holiday bread, ever...Make this one!
