I'm a newly-wed that enjoys spening as much time as I can in the kitchen! I like to tell people that's how I 'caught' my husband ;) I love having BIG sunday dinners with lots of friends and family over.. but since we're still in an apartment, I can only have at max 10 people :( I'm soo looking forward to the day where I have a house with a big kitchen *crossing fingers* and LOTS of room to invite as many people as I can over for dinner!
My favorite things to cook
I love making traditional Italian American dishes (coming from an italian background).. but I also enjoy making total comfort food!! There's basically nothing that I mind cooking... what can I say, I'm a foodie! I also enjoy baking tremendously, but I haven't been lately b/c I'm trying to lose weight :/
My favorite family cooking traditions
I think I'm one of the only people that I know that totally loves eating meatloaf... this is because of my Irish mother's awesome meatloaf recipe that even my meatloaf-hating husband likes! My italian father did most of the cooking in the house, so I grew up eating pasta almost every day.. I love making a big pot of homemade gravy with hot/sweet sausage, meatballs and whatever else I can cram into the pot!
My cooking triumphs
I'm famous for my gravy, penne with vodka sauce and Risotto! I'm just starting to experiment with Indian dishes and some Asian stuff.... I'm not at the expert level here yet.. but I'm still learning! I'm one of those cooks that likes to open up the fridge and see what I can come up with... experimentation is the name of the game!!
My cooking tragedies
I've really had more baking tragedies than cooking... its something about all of that measuring.. But everyone makes mistakes.... I try to forget about most of them ;) There was the first time I made fried chicken for company and it wasn't cooked all the way... yeah, I'll never hear the end of that one :v/

Salsa Chicken Burrito Filling
I made this in my crock pot and it turned out great! I used 4 skinless boneless chicken breasts and 1/2 package of Taco seasoning. I think the whole package along with the other spices would have been a little overpowering. I put in in the crock pot for4 hours on high and they were done by like an hour and 45 minutes into cooking. Really loved this.. it tasted a lot like the chicken filling of another popular recipe on this site for Chicken Enchiladas.. I think I'll use this recipe to make enchiladas from now on!!

Slow Cooker Pork Chops II
Made this last night as a quick dinner for my husband and the pork came out so tender and the broth flavored with the meat juices and the seasonings was delicious as well.. I used the leftover broth to make couscous to serve alongside. I will definitely make again!

Mississippi Mud Pie I
I received this recipe as a part of a recipe book from my Bridal Shower a few years back. This pie is to die for!!! Every time I make it I get rave reviews and people always ask for the recipe. Make it, you'll love it. Its nice and sweet, but not heavy or rich..its just enough sweet and creaminess!! I'll make this over and over. I'm actually thinking of using Jello's Pumpkin Spice jello to make it for Thanksgiving.
