Penne Pasta with Spinach and Bacon

I fixed this for dinner tonight and it was really good. I did drain some of the bacon grease and sauted about 1/2 cup diced onion with the garlic but other than that followed the recipe to a T. My husband liked it so that is a plus. I will definitely make this again. It still needs a little something...maybe some kind of cheese or some spices for more flavor...so I will experiment.

Cabbage Roll Casserole

This recipe was a good start but needed a some modifications. I followed the recipe the first time I made it and thought it was a little bland and the rice was a little crunchy. The next time I made it I added some ground pork and some spices...better. The last time I made it I used mostly ground pork and browned the onion with the meat. I added 2 heaping Tablespoons Hungarian Paprika, 1 heaping Tablespoon Garlic Powder and plenty of fresh ground pepper. I also parboiled the rice. It was delicious. I will make it again...with my modifications.

Amy's Asparagus Casserole

I made this for dinner with salmon and rice. I thinned the soup down a bit with some water. That seeemed to help make it easier to spread over the cheese. I thought the flavors were a little strong. I stirred my rice into the casserole and thought it was much better. I will make this again using the rice.

Asparagus Supreme

I fixed this recipe for lunch for me and my husband. I did make a few changes. I used fresh aspargus. I cut it into 1 inch pieces and sauted it in olive oil and Paula Deen's house seasoning for about 3 minutes. I also used the same oil and house seasoning to cook the chicken and vegetables. I added half a can of milk to the sauce to thin it down a bit. It was good, but I will experiment with seasonongs for more flavor. Maybe a can of Cream of Chicken and Mushroom Soup and a little garlic and herbs.

Orzo with Chicken and Artichokes

I just finished eating this for dinner. It was very good. I only used half the orzo the recipe called for and cooked it in chicken broth for added flavor. I used marinated artichoke hearts instead of plain and rough chopped them to make the pieces smaller. I used chicken broth in place of the wine and it was still tasty. My husband is eating a second helping right now. I will definitely make this again using the changes I made. Thanks for a great base recipe.

Mom's Zucchini Bread

I have made this recipe twice in the past two days. I made a few changes, as others suggested. I used 1 cup white sugar and one cup brown sugar. I would have used applesauce instead of oil if I had any. I also added 1/2 teaspoon nutmeg. It is delicious! I gave some to my neighbor and she liked it so much she asked for the recipe. She said it was “the bomb!”

Pan-Fried Asparagus

I fixed this recipe earlier this week and thought it was delicious! I did cut back on the oil and butter. I planned to add about a teaspoon of garlic powder when I put in the salt and pepper. I made a mistake and grabbed the onion powder instead. What a tasty mistake! With the minced garlic I added the last few minutes of cooking all the flavors were wonderful! I will ‘accidentally” put in onion powder from now on. Thanks for the great recipe!

Easy Yet Romantic Filet Mignon

We made these filets for dinner today and fixed Garlic Baked Potatoes as a side (also found on allrecipes.com). We grilled them instead of broiling them and they turned out great. One thing we didn’t like was the shallots. We thought they were a bit too strong and overpowering. Next time I will just sauté mushrooms and onions to serve with the filets. My husband also thought using butter instead of olive oil would be very good. Thanks for a great recipe.

Garlic Baked Potato

I made these potatoes for dinner today to go with the Easy Yet Romantic Filet Mignon (also found on allrecipes.com). I usually in a hurry so I just microwave my potatoes but the skins are never crisp or all that appetizing so I wanted to give this recipe a try. I baked my potatoes a little slower at 300 degrees for two hours or so. I didn’t measure anything. I just oiled the potatoes and then sprinkled the seasonings on to my preference. They turned out very well. We topped them with butter, sour cream and pepper. There was nothing left on our plates and my husband usually isn’t a potato skin eater. Thanks for a recipe I will use again and again.

Basil Cream Chicken

This is a good base recipe. I made a few changes and it turned out great. I cut the chicken into bite-size pieces. I skipped dipping it in milk and just tossed it in seasoned bread crumbs. I fried the chicken in olive oil instead of butter. I added 1/2 tsp. garlic from a jar while I fried the chicken. I doubled the sauce recipe but changed it a little too. I added 2 Tbsp. flour to the drippings and then added the broth. I used Half and Half instead of cream. I added 1/2 tsp. salt and used 1 Tbsp. dried basil since I didn't have any fresh. I also used 1/2 cup Kraft grated Parmesan Cheese and 1/2 cup freshly grated Pecorino Romano Cheese. I left out the Pimentos. I served the chicken and sauce over Penne pasta. All in all it turned out delicious. I will be making this again!

Garlic Chicken with Orzo Noodles

I tried this recipe last night. It was good but was missing something. I doubled the spinach. I also added a little lemon juice and lemon zest. It helped but it was still a little bland. The next time I make it I will probably add some more spices or make a sauce or something to add to the flavor.

Crepes

This recipe is awesome! It was my first time making crepes and it was so easy. I made my own filling. I just diced some potatoes, onion and mushrooms and sauteed them in olive oil and butter, added some crumbled, cooked bacon, some chopped, fresh spinach and some salt and pepper during the last couple minutes of cooking. It turned out great. Had enough batter to make dessert crepes with some strawberries, bananas and whipped cream. Delicious! My husband loved both of them. He bragged to the guys at work about them. I will definitely make them again! Thanks for the great recipe!!!
