About this Cook
I love to cook. I have been cooking for my husband for more than 10 years now. I enjoy cooking for family and friends. I strive to be as good a cook as my mom.
My favorite things to cook
I like to experiment with new recipes so I guess it depends on my mood. Sometimes baking, sometimes casseroles, sometimes meats, etc. I cook chicken a lot. I like it baked, fried, grilled, in soups...just about any way you can cook it.
My favorite family cooking traditions
Getting together with family for all the major holidays and having wonderful meals. No one can ever go hungry with all the food that's prepared.
My cooking triumphs
One that stands out in my mind is the first meal I made my husband (my boyfriend at the time). It was my first time making fried chicken and it turned out great. He loved it. I guess the saying is true that the way to a man's heart is through his stomach. :)
My cooking tragedies
Learning to cook on an electric stove (I was taught on a gas stove). My poor husband had a lot of burnt meals when we first got married. :(

Penne Pasta with Spinach and Bacon
I fixed this for dinner tonight and it was really good. I did drain some of the bacon grease and sauted about 1/2 cup diced onion with the garlic but other than that followed the recipe to a T. My husband liked it so that is a plus. I will definitely make this again. It still needs a little something...maybe some kind of cheese or some spices for more flavor...so I will experiment.

Cabbage Roll Casserole
This recipe was a good start but needed a some modifications. I followed the recipe the first time I made it and thought it was a little bland and the rice was a little crunchy. The next time I made it I added some ground pork and some spices...better. The last time I made it I used mostly ground pork and browned the onion with the meat. I added 2 heaping Tablespoons Hungarian Paprika, 1 heaping Tablespoon Garlic Powder and plenty of fresh ground pepper. I also parboiled the rice. It was delicious. I will make it again...with my modifications.

Amy's Asparagus Casserole
I made this for dinner with salmon and rice. I thinned the soup down a bit with some water. That seeemed to help make it easier to spread over the cheese. I thought the flavors were a little strong. I stirred my rice into the casserole and thought it was much better. I will make this again using the rice.
