Amy's Garlic Egg Chicken

Good solid everyday chicken dish, I halved the breading, butter and garlic and it came out perfect. I wouldn't make this for company or anything, but chicken came out fairly juicy and flavorful. Not as good as Cooking Light's Chicken Francais....

Baked Dijon Salmon

What can I say, wow YUMMAY. We really enjoyed this recipe. I made it with wild sockeye salmon which was very thick so cooked it about 15 mins in a convection oven at 400 degrees. Served it with some angel hair pasta with olive oil and parmesan cheese. Will definitely make again.

No Time to Cook Chicken

This reminds me of the creamy chicken my grandma used to serve to us over a bed of hot rice. It was quite tasty, I broke up the chicken when I added the sour cream and added one cup of mushrooms to the recipe. I will probably make this again...

Easy Slow Cooker Meatballs

I also cooked the meatballs in the oven for 15 mins before adding them to the crockpot. They held together pretty well. I did get a bit of burning on one of the sides of my crockpot which was a bit hard to clean up. The taste was very good and my boyfriend loved the meatballs. I'll probably continue to make this occasionally.

Double-Cheese Meat Loaf

We LOVE this meatloaf. Ever since I found it in the Cooking Light Cookbook it's been a staple recipe at my house. The cheese makes it really flavorful and the ketchup/mustard topping tastes delicious. Just cook up some veggies and serve! Great for sandwiches also.
