Almond Rice Pilaf
This was a great side dish. I used green onions which gave it some color. Mild taste really compliments any stronger flavored main dish.

Colcannon
This was very good. Had just returned from the hospital, was feeling tired so I used only things I had on hand. To make it easy I actually used instant mashed potatoes and a bag of shredded cabbage that I cooked until soft. Sauted some green onions in butter and mixed all together. Surprisingly delicious and fast.

Corn Dip
Added a whole envelope of taco seasoning to add some flavor. Was very good but not too pretty to look at and guests had a tendency to pass it up in favor of the taco soup I also served. Should have served it as an appetizer where it would have have no competition.
