a newly wed learning to cook for her hubby!
About this Cook
I am a busy student teacher, a newlywed, and a part-time waitress. This combination of occupations has made me someone who likes to cook food that is quick, within my budget, and of course, up to par with the cooking techniques and flavors I have learned about while working in the restaurant industry. Since I am Filipina-American, my personal favorite style of food is American food, yet I am constantly experimenting with food that caters to the tastes of both my American friends and filipino family.
My favorite things to cook
lumpia, different types of salads, PASTA AND ITALIAN FOOD (most of which I have learned to make from the Italian restaurants in which I work), aesthetically-pleasing dishes that are also pleasing to the tummy!
My favorite family cooking traditions
of course filipino food, except that we omit lots of the "weird" things that could turn off our American-born friends and family members.
My cooking triumphs
Chinese chicken salad, beef and chestnut lumpia, strawberry cheesecake pie, spinach dip, sinigang (filipino soup), pesto alfredo with salmon, arrabiata sauce, chicken and spinach lasagna, creamy chicken enchiladas,lemon baked chicken etc. These are all things that people usually request from me and I'm darn proud of it! I look foward to adding more to my repetoire =). hehe.
My cooking tragedies
lemon meringue pie (just turned out disgusting)and I've hated it ever since. One time I tried to pre-make lumpia and they got stuck to each other after I froze them and I was unable to even pull them apart without tearing them! It was a waste of time and money and we ended up having to get store-bought ones for the party. -when i made kabobs for a party, I ended up over-marinating it! I didn't know it was possible to over-marinate. boy was i wrong. It ended up making all that meat the texture of playdough! ugh! -too many to name...but then again you learn from your mistakes =)

Devil's Food Cake I
Although this isn't the absolute best devil's food chocolate cake I've ever had, it's the best one I've personally ever MADE! Lots of the recipes on this site gave me chocolate cake that looked lighter in color and didn't have that deep chocolate flavor I was looking for. This one was really good with tweaking that I did from others' advice. I found this a TAD dry, but it could've been from how I baked it. I made mini cupcakes with this baked at 350 degrees for 15 minutes...i suspect i should've baked them for maybe 12 or 13 minutes. Also, I added 1/2 tsp of instant coffee granules and 1/2 tsp of vanilla extract to the warm butter/chocolate mixture and used a few tablespoons of bittersweet chocolate chunks. To make it even EXTRA chocolatey I took the advice to add 1/4 cup of unsweetened cocoa powder to the dry mix. I'm hoping this turns out even better next time I make it cuz that would be to die for! And oh yeah, i topped this with a dollop of cream cheese frosting. Perfection.

Peanut Butter Carrot Cookies
I love the taste and the nutritional value of these cookies, but I wasn't too crazy about the texture. Like other users, mine fell apart! I can't even pick them all up without it falling apart in my hands. I'm not quite sure what I did wrong. I made these before and they turned out better. This second time around was disappointing.

Pumpkin Cake III
Wow, this turned out great! I also followed the suggestions to sub 3/4 oil with applesauce and it turned out super duper moist! Top with a bit of cream cheese frosting and it was such a treat. Similar to carrot cake in flavor. I baked mine in medium muffin pans 350 degrees for 22 minutes and turned out great!
