Good Old Fashioned Pancakes

The best! I make up a big batch of ingredients in a large ziploc bag, then then just scoop a generous 1 1/2 c out when its time to make pancakes. Also, use at least 1/2 whole wheat flour in the recipe - still tastes great, very fluffy and a bit healthier, too.

Lemon Chiffon Cake

This was almost the cake I was looking for. I did not make the pie filling cream mixture, but instead just served with whipped cream and berries. The cake had great texture, but was a bit heavier than I expected, and the lemon was almost undetectable. I will make it again, but would probably add more zest or even some lemon extract. Thanks!

Creamy Chicken and Broccoli Casserole

Way more work than it was worth. I appreciate the homemade sauce (rather than just using a much less healthy canned cheddar broccoli soup), but in the end it was uninspiring and neither of my kids would touch it. If I wanted a dinner that only my husband and I would eat, I'd have made something much more exotic.

Aunt Mary's Chocolate Cake

This did not turn out well at all. It was too light, fell apart coming out of the pans, and couldn't be iced back together. Also, not a very chocolatey cake. An old standby "6-minute Chocolate Cake" is much easier and better tasting.

Thai Chicken Balls

I'm glad I decided to use my ground chicken for these yummy balls. I reduced the green onions and chili sauce because I was also feeding them to my 10 month infant (who liked them!); that left them a bit mild, so if making again I'd follow the recipe quantities. Oh yeah, and I'd just make burger patties and save all the work of forming and cooking balls!

Pizza Pasta Bake

Tasty and fairly easy, but saltier than necessary (prepared pizza sauce, tomato sauce, sausage, pepperoni, bacon). Next time I'll use no added salt tomato sauce (or no added salt canned diced tomatoes) and just add additional seasonings for flavour - oregano, basil, black pepper. My picky 2 year old did like it, so we will try it again with minor changes.

Pastitsio III

I'd give it a 3.5 if I could, as the sauce tasted quite good. I made one change that didn't work well - I increased the amount of noodles, and it ended up quite dry and not saucy enough and the bechemel was too thin. I also used a 9x13" pan (recipe didn't say what size square pan to use), and I a smaller casserole dish would have resulted in a more moist Pastitsio.

Rosemary Zucchini Sticks

Yummy, but no need to peel the zucchini! I used ground sage instead of rosemary (and also parmesan cheese and garlic powder in with plain bread crumbs) and they were delicious.

Cottage Meatloaf

We have made this several times and it always disappears fast. The first time I let it sit a bit before baking and it fell apart after I took it out of the oven. If you don't over mix it or delay baking too long, it is a great, tasty meatloaf! Oh yeah - it makes good cold meatloaf sandwiches, if there are leftovers!

Basic Pizza Crust

I've made this twice and will be making it more often. I'm a bit intimidated by yeast, but it turned out pizzaria style without the fuss of rising, punching, kneading etc... Next time I'll up the salt, as it was a bit bland. Also, I forgot to pre-bake the crust before adding toppings, but it still baked up just fine (took 15-20 mins).

Crazy Crust Pizza Dough

I like the fact that this is a no-rise crust that is pizzaria quality without the waiting. I found it just a bit bland, so will add a bit more salt next time (up to 1tsp?). I put the toppings on and started to bake the pizza before realizing I was supposed to pre-bake, and it still turned out just fine.

Baked Macaroni and Cheese I

A suggestion for making white sauce - warm the milk in the microwave before adding to the roux. Just whisk a lot as you add the milk, and it will thicken faster and turn out just fine.

Layered Macaroni Casserole

We all enjoyed this - my 15 month old daughter even ate beef for the first time in months!!! I didn't simmer the sauce as long as recommended and it still turned out well. I might try with less ground beef, and add some chopped broccoli and cauliflower to the pasta water next time to increase the veggie factor.

The Best Banana Bread

Very good banana bread. I was looking for one that wasn't too sweet or too dense and this one fit the bill. I added a bunch of walnuts for crunch and used butter instead of margarine. It took longer than 1hour to cook, but I always find that with banana bread and most loaves.

Chocolate Cupcakes

Very yummy cupcakes! I used a bit less milk (6-7oz?), made 12 x 3/4 full muffin tins, and they baked in 25 minutes. Moist and a bit chewy, not too sweet. Perfect even without icing. I'll be making these again.
