Strawberry Bread

I just made this bread in a desperate attempt to use up what left of 5 pounds of fresh berries. A total and utter waste of the berries - the people who say their bread doesn't cook through are dead on accurate. I figured the problem was a bit too much oil and sugaring the berries after slicing, so I cut down to 1 cup oil and just sliced the berries. Still a great big no-go. I left them for over an hour, and at 75 minutes cut my losses - pulled them out of the oven with overcooked edges and ooey-gooey middles. Just gross.

Playgroup Granola Bars

These are fantastic! I made them for a recent playgroup because there's a couple of children with peanut allergies and we can't serve regular granola bars to them. HUGE HIT! They are easily jazzed up with different flavors - I made dried blueberry and ginger, and my 3 year old would've eaten half the pan by himself.

Clone of a Cinnabon

Very, very delicious! Leftovers - if you have them - freeze well individually (but you'll need to plan ahead and refrain from frosting them). Allow to thaw overnight in the fridge, and refresh in a 350 degree oven for about 20 minutes.

All Day Macaroni and Cheese

Incredibly, incredibly, incredibly bland - even with extra-sharp cheddar - reminded me of hospital food. Also quite clumpy. At least it was easy. Will not make it again.

Glazed Meatloaf II

Fantastic! I've made this 3 times in 2 weeks, per the request of my husband and toddler. We don't eat red meat, so I usually make it with 1/2 ground turkey and 1/2 ground pork. I double the amount of glaze because I cook the loaf free-form on a half-sheet, so I coat the sides as well as the top. I also mince an extra 1/3 of a cup or so of onion and add it to the glaze. I also don't keep white bread in the house, so I substitute 3/4 cup bread crumbs for the crushed bread. Leftovers make great sandwiches for hubby's lunch, too! Definitely a keeper recipe.

Good Old Fashioned Pancakes

Very good recipe that I will make over and over if there's no buttermilk in the house. I added about a teaspoon of vanilla, a quarter cup or so of oat bran, and about 2 tablespoons of water for some extra body and flavor. Still very light and fluffy, but substantial.

Buttermilk Pancakes II

Perfect pancakes. I make just a half batch since my family is just 2 adults and a toddler, and it scales beautifully. Light, fluffy, golden....a fantastic way to start (or end, as we often do) any day!

Chicken Enchiladas I

Fantastic!!! I made these twice in one week at the request of my husband. My toddler loved them, too! Super easy to make, and wow - filling! I also brought a tray of them to a friend who just had a baby, and her family also raved. Her toddler was reduced to crying when there weren't any leftovers for his lunch the next day. YUMMY STUFF!

Banana Bread IV

Followed the recipe exactly and all I can say is awful, awful, awful. Heavy, sticky, gooey - yuck! Both loaves went right in the trash. A waste of ingredients for sure.

Homesteader Cornbread

Nice, sweet corn flavor, but the texture was somewhat rubbery. Made a ton, which was unfortunate because it wasn't a big hit so there were tons of leftovers. Toasted the day-old, added butter and honey - that was pretty good. Still, wouldn't make it again.

Butternut Squash Soup

Good recipe - I rated a 4 instead of a 5 because I cannot imagine how thick it would be if I had followed it exactly and used a pound of cream cheese!!! I had a couple cups extra of squash, so adjusted the amounts as necessary. It was quite thick even before I added the cream cheese - about the consistency of heavily whipped potatoes. So I just went with 4 ounces, and still had to add about a cup of water to thin it out. I generally like a thick and hearty soup, but it was just too thick. Good flavor, though! I think next time I may try adding some buttermilk instead of the cream cheese to get the tangy taste.

Louisiana Sweet Potato Pancakes

Recipe is OK as written, but I found they needed more spice than just a 1/2 tsp of nutmeg (and I used fresh). I tossed in a 1/2 tsp of cinnamon and a pinch of ginger to what was left in the batch - very complex and satisfying!

Waffles I

Ugh - I'm SO stuffed! Very good waffles - crispy and light, unless you eat 400 of them like I just did. My waffle maker is a sad little thing, and they still turned out great, which makes me think I need to invest in a better machine and really blow my family away.

Peanut Butter and Chocolate Peanut Butter Cup Cookies

Eh. I made these as part of a cookie tray for the 4th of July - alongside chocolate chip, oatmeal raisin and orange-sugar. By the end of the cookout all the other cookies were gone, and I had more than half of these left and not one request for the recipe. They don't have a pronounced chocolate/peanut butter flavor - if I hadn't known what was in it I wouldn't have been able to guess. They do have good chew and texture. They're not awful, but I wouldn't make them again.

Banana Pancakes I

This recipe is NOT one I would make again. I assumed my toddler was just having a picky morning when he refused a second bite, because he loves pancakes and loves banana. Then I tried a bite, and yuck. A very thick batter makes cakes that came out golden and disgustingly gooey, or burnt and just barely cooked through - neither choice is particularly pleasing. After cooking up about 3/4 of the batter trying to manipulate the heat and cooking time to rescue breakfast, I gave up and we had cereal.

Mexican Rice III

Very good rice, although in my mind not entirely authentic. My husband IS an authentic Mexican, and his mother's rice is nothing like this. It may just be a regional thing, though - I saw a few comments that this rice is similar to that served in Arizona restaurants, whereas my in-laws are in Texas and most of the rice served in those Mexican restaurants are very similar to my mother-in-law's. Although here in the northeast I find most Mexican restaurant rice similar to what I'm used to, also. But, anyway.... Next time I will: omit the green pepper as their taste tends to bully the other flavors, up the cumin to 3/4 tsp, and stir in the cilantro after the rice is cooked to keep it's fresh, earthy flavor intact.

Glazed English Toffee Cake

SPECTACULAR! Jaws dropped when I brought this to the table - definitely a good "TA-DAAAA" recipe. Not a crumb lived to see sun-up - the small wedge that wasn't eaten at the table was snarfed down by a houseguest sometime during the night. Definitely a keeper!

Award Winning Soft Chocolate Chip Cookies

I already make really killer chocolate chip cookies, but tried this recipe because I was intrigued at the idea of adding pudding to what is basically the Toll House recipe. The texture brings me back to the first time I tried eating Play-Doh. Yes, they are moist and chewy - but in a strange way that I found incredibly unpleasant. Even my husband wouldn't eat them - and believe me, that's saying something!
