Cottage Cheese Chicken Enchiladas

These enchiladas are fabulous! It took me a lot longer than 30 minutes to prepare, though. I heat the enchilada sauce in a saucepan and dip the tortillas in it, one-by-one, to soften them up before filling and rolling (rather than frying them). I will make these again and again!

Yummy Honey Chicken Kabobs

This is a delicious recipe! I've used the marinade for veggies on the grill, as well as a variety of poultry and seafood. If you use bamboo skewers, be sure to soak them in water for about an hour before grilling so they don't go up in flames.

Amy's Garlic Egg Chicken

Great chicken dish! My only complaint is that it makes enough dry ingredients for at least eight breasts, so I wasted a lot of expensive ingredients. I will half the recipe in the future, or cook a double batch and freeze some.

Quick Gnocchi

This recipe was incredibly easy and yummy! I used 1/2 cup of semolina flour and 1 cup of all-purpose flour. I served the gnocchi with a garlic mushroom sauce. This is a keeper!

Spicy Garlic Lime Chicken

I will make this easy recipe again but with some changes. I loved the spice mixture but it wasn't enough to adequately cover/rub four breasts so I had make another batch. Also, way, way, WAY too much garlic powder at the end. It overpowered the other flavors, especially the lime. I will reduce the amount of garlic powder and double the other ingredients in the future.
