Cranberry Couscous Salad
Very good. I tripled this for an office party and ended up with way too much of the balsamic mix. Luckily, I added it a little at a time so I just refrigerated the extra. My changes: (1) cooked couscous in vegetable stock instead of water (2) no carrots (3) added a little bit of sugar to the balsamic mix (4) no nuts (in case of office allergies, although I think they would be delicious) (5) added reduced fat feta The sweet of the cranberries and salty of feta and balsamic were a fantastic combination. This was great to eat right after making, but was even better after being refrigerated all night.

Clark's Quiche
So good! I took out all the meat and added more spinach and mushrooms. I also used the shredded "mexican" blend mixed with shredded mozzerella instead of the cheddar and monterey jack. The prep was way longer than 15 minutes. I also cooked it for an addition 5-10 minutes. And like the other posters, I used a frozen deep dish pie crust (I let it defrost while I was prepping). I served this at a brunch with bagels and fruit. No one touched the bagels. It was all about the awesome quiche!
