About this Cook
My cooking tragedies
I tried to make fudge for my Dad on Fathers Day. It was the worst looking thing we ever saw. It was so soft, I couldn't take it out of the wax paper and dish I let it set in. My Dad ate it anyway though!

Eclair Cake
This was a big hit with my friends. I wouldn't say it taste exactly like an Eclair, but it was still awesome.....and so easy to make. FYI: I used sugar free pudding, lite whipped topping, and cinnamon grahman crackers. I also melted chocolate chips and poured it on top, rather then using canned icing. I think it is the perfect desert for a summer time BBQ, because it is chilled and super easy.

Banana Waffles
I am rating this recipe 5 stars because it was sooooo easy to make. I don't personally care for waffles, but my husband does. He ate every single bit on his plate. I actually even ate one. The banana flavor was just a nice change of pace and since I hate throwing out bananas at the end of the week, this recipe was perfect. FYI: I subbed whole wheat flour (1 for 1)for the white flour and they still came out great.

Dark Chocolate Cake I
I loved this recipe! I actually doctored it up a bit, but will still definitely make it again. I added a box of chocolate pudding, melted baking chocolate, and milk. I also used a chocolate butter cream icing for the base decoration and glazed the top with melted chocolate. I finished off the top with large strawberries. I made it for my husband’s birthday and everyone loved it. It is very chocolaty but not too sugary sweet…..very decadent. It kept very well too. I made it on a Friday night, then refrigerated the three 9in round tiers to decorate Saturday. I didn’t serve it until Saturday night at a BBQ. After everyone left, I forgot to wrap the remainder of the cake. Only the exposed part of the cake dried out. The rest of the cake was still very moist on Sunday, even Monday evening. I'll post the exact recipe I used, and a picture of the cake, for anyone that is interested... under Cyndi's Decadent Chocolate Cake......Thanks for the original recipe posting!
