Dave's Coleslaw

This stuff is awesome. It's not heavy and too creamy like some deli cole slaws. I substituted bread-and-butter for the dill and dijon for yellow mustard just because that's what we had. I'm definitely holding on to this recipe.

To Die For Blueberry Muffins

These muffins are gorgeous and, even though the batter is unnervingly thick, they bake up fluffy and perfect. I used the modified topping (found in review #1) - it was awesome. The brown sugar melts so much better than white would have, but it made too much, so I'll just have to make more muffins! :o) My only criticism is that these are too sweet. I will cut back on the sugar next time.

Amish White Bread

This recipe is awesome. And addictive. I cut the recipe in half since there's just two of us. Based on some of the reviews, I also cut the sugar back to 3 tablespoons. I made the dough in the bread machine and then baked it in the oven. The texture is perfect, rises beautifully, and smells amazing. This is my new favorite bread.

Authentic Louisiana Red Beans and Rice

Great recipe! I used canned beans because I was in a hurry and turkey kielbasa (for health, even though andouille tastes better). Still turned out really great, but a cornbread side is a must! Will definitely make again :o)

Roquefort Pear Salad

This salad is awesome! I added spinach for texture and craisins for color. ***Return review: After making this several times, I decided to reduce the sugar because it make such a mess on my non-stick skillet. Cutting the sugar down by only a couple tablespoons made a huge difference in the clean-up and the pecans (which were still sweet and crunchy, but the crunch was from the pecan, not the caked on sugar).

Kitchen Sink Cookies

These are really good cookies. I didn't have vanilla chips and doubled the chocolate (also had some leftover jumbo choc. chips that I threw in). Used two heaping cups of oats - may do more next time. Definitely use salted butter - the salt complements the sweet very well. Will make again.

Iced Pumpkin Cookies

Really nice cookie. It is bready, but in a good way. I thought the glaze was okay, but very sugary (obviously). I think this would be much better with cream cheese icing. I topped each cookie with a walnut. I might even add walnuts to the dough next time. Overall, pretty good.

Delicious Pumpkin Bread

Great pumpkin bread! I followed the advice of others and substituted half the oil for applesauce (heaping 1/2 cup for moistness) and doubled the cinnamon. I also added 1/2 tsp. nutmeg and 1/4 tsp. ground cloves. I halved the sugar and it was still sweet - I think the recommended amount of sugar would make it dessert-sweet.

Butterscotch Cookie Bars

I like the idea of this butterscotch/choc/nutty cookie bar, but something is really missing. The bar was really sweet, but not in a good, flavorful way. These don't seem to be worth the calories to me.

Oat Applesauce Muffins

I really wanted to like these muffins, but they were very bland. The baking soda flavor was strong. After baking one batch, I doctored up the batter and added more sugar, cinnamon, allspice, salt, and cardamom, almonds, and blueberries. I'll continue to tweak this because I like the idea of filling and healthy muffins... these just need some work, in my opinion.

Creamy Chicken and Wild Rice Soup

I did what some suggested and used whole milk instead of the cream. I also added carrots, celery, onion and garlic, but still thought it was kind of bland. I threw in a can of great northern beans, mushrooms, corn and a few handfuls of baby spinach and ended up with a really hearty white minestrone.

Honey Of An Oatmeal Bread

Good basic honey-oat bread - fluffy and moist. It is definitely on the sweet side, so I might experiment with the honey. I doubled the yeast based on some of the reviews and I'm glad I did. I'm making a second batch this morning :-)

This soup is really good! A couple changes - definitely add at least one can of garbanzo beans (balances the "bite" of the wine/spinach); Saute the carrot/onion/celery mixture until the carrots are soft (mine stayed too firm for a couple days); Add the beans during last 20 minutes to prevent mushiness. I found that I needed more liquid, so I tossed in a very small can of tomato sauce and some sugar, as well as an additional 2 c. of chicken stock and another 1/4 c. of wine. I will make this all the time!

Apple Crisp II

This is a great recipe. I omitted the water and instead I let the apples sit in the sugar mixture (with a drop of lemon) for about 15 minutes before adding the topping. I halved the sugar and added pecans to the topping. Also, I brushed melted butter over the top after it was almost finished to crisp even more. I will definitely make this again!

Blueberry Zucchini Bread

A few changes: I added walnuts, 1/2 c oil with 1/2 c applesauce, only 1 1/2 c sugar and 2 more tsp vanilla. My husband said he could just eat the batter by itself. They are shockingly blue, but so delicious. The zucchini makes it!

Chicken Tetrazzini for a Crowd

This recipe is fabulous! I did omit the pimentos and add chopped vidalia onion, minced garlic, a julienne cut carrot and two ribs of chopped celery (I added raw mushrooms to the sauteing veggies).

Hot Peanut Sauce

I was looking for a quick and easy peanut sauce for lettuce wraps. This is it! Didn't have cayenne, so I used some red curry paste. Also added some cumin. This is super!
