Chicken Cheese Chowder
Loved this! I added a clove of garlic and cooked the vegetables in the butter. I used leftover herb and garlic marinated chicken breasts and added some minced jalapeno pepper slices along with a dash of cayenne for some kick. This is a keeper.

Egg and Cornbread Bake
I've made this recipe several times. Everyone loves it. The only thing I changed was to use 8 eggs for 8 servings, otherwise the servings seemed too big. I served it with a light fresh fruit salad for brunch and it was perfect.

Baked Mashed Potatoes
These are the best mashed potatoes I have ever served. The only change I made was to run the potatoes through a ricer after cooking instead of mashing. These are destined to become a tradition at my house.
