These muffins were great! I entered them in an Oatmeal cooking contest and won 2nd place in the muffins and breads category. The muffins were pretty crumbly so I decided to make mini muffins and it worked out wonderfully. Also, baking them longer helped the muffins be less crumbly. I definately recommend this recipe for any meal of the day!

This recipe is a winner (literally)! I entered it in an oatmeal festival and it won 2nd place! Instead of sprinkling the chocolate chips on top, I melted them and poured it on top. Once it cooled in the refridgerator, I spread raspberry jam on top and added fresh raspberries and sliced almonds. Very delicious!!

I made this for my family for dessert and it is GREAT!!!! I absolutely love cream cheese frosting and this was a great way of using it with pumpkin. I will definately make this again. The recipe is for a smaller amount than my rectangular pan held, so I used a pie pan and cut it like a pie. Mmmm!!
