Still working outside of the house...Enjoy cooking large meals for holidays and making wonderful desserts that everyone raves about...I have many years of experience and have created many of my own recipes that I have shared with friends and family....I also make artisan bread, took a short course on it...I have done many things in my life and I guess my strongest passion is for cooking,creating and sharing.
My favorite things to cook
I have many favorites....Italian Rum Cake, Ricotta Pies, Biscotti, pulled pork(Italian style), which is my heritage...gourmet cooking....fresh fruit pies when in season...and I only use my homemade whipped cream...Once you get used to this, there are no substitutes and when using it for an icing, you must use a stabilizer to keep it firm....I sometimes make my own butter when I have extra heavy cream left over with a close expiration date....I have too many favorites to put down in words...Sometimes when I make something I'll add or change an ingredient just for a variation to see if I/we like it....It's fun to take leftovers and create a new dish... and I will admit that when in a hurry, I sometimes take a cake mix and doctor it up and no one knows the difference.
My favorite family cooking traditions
Cooking the Turkey for Thanksgiving with many different stuffings and side dishes/casseroles and desserts...Easter is a large Ham and a whole leg of lamb with many side dishes and desserts. My husband,daughters, and grandchildren always say I cook too much food....but they all look forward to taking tons of leftovers home with them...I have a rule of thumb...If all the food is gone at the end of the meal/buffet....that means (to me) that there wasn't enough to go around....I guess I will never change this thought....It just wouldn't be me.
My cooking triumphs
Every holiday with so many different desserts and all my cookies/biscotti/pizzelles and baba rum cakes and sticky buns and making very large birthday cakes for surprise parties with my great homemade white and dark choc. roses and so many, many more decorating designs with the best icing that is not sickening sweet...and of course, my ganache is always a big hit on a moist choc. cake with white choc. mousse filling.
My cooking tragedies
Not to many....I have one memory when I first got married and made homemade chicken soup....I rinsed the chicken but never removed the bag inside the cavity, for some reason I didn't see it...after cooking the soup I realized what I did, I just took it out and never told my husband or especially my mother. Actually this is the first time I have shared this with anyone and now I'm going public! Ha!...At 65 years of age, I don't care anymore....I feel I can do and say whatever I want...of course within reason...
