Pumpkin Pie Bread
Very good. Used whole wheat flour instead of white, applesauce instead of oil. Cut sugar down to 2 1/2 C but next time I will try 2 C, it was plenty sweet. Cooked for 60 mins. Thanks.

Hudson's Baked Tilapia with Dill Sauce
Amazing. I didn't measure the cajun seasoning, I just sprinkled it on. I didn't have lemons so I sprinkled some lemon juice over the fish before I put it in the oven. The fish took exactly 20 mins to cook. The sauce was amazing on the fish, it is also very good with vegetables. I subbed plain nonfat yogurt for sour cream. I recommend this recipe. Thanks for the recipe.

Broiled Scallops
First off after you rinse the scallops you should dry them off, if you don't all the water leaks out of them & will burn your pan under the broiler. That's what happened to me. The scallops took forever to cook, I had to leave them in much longer than the time stated. The overall taste was very mediocre. I suggest sauteeing scallops. Sorry, to be so harsh but I wish I never tried this recipe.
