About this Cook
I love to cook and bake for family and friends.
My favorite things to cook
Desserts, cookies, cakes, dips, anything to do with seafood.
My favorite family cooking traditions
My favorite family cooking traditions are not very practical for today's living style. Lots of butter, bacon grease, fried foods, etc. I only get this stuff now when I go home and I my Aunt cooks for me:-)
My cooking triumphs
Creating my own unique spin on favorite dishes to make them low-fat/low-sugar since learning about my Diabetes.
My cooking tragedies
My first Thanksgiving dinner, I didn't know about the giblets left inside the turkey cavity. I smelled it before I knew what it was and dinner was ruined:-)

Pork Chops with Blue Cheese Gravy
This was absolutely heavenly! I doubled the blue cheese but otherwise made exactly the same. It's very rich so it's not an every day meal but great for dinner parties or special occasions. Thanks so much for a great recipe.

Potato and Cheese Frittata
I made this exactly as stated, but used EggBeaters instead of real eggs. It turned out very delicious:-) It is a nice quick, easy recipe to put together after a long day at work and provided leftovers for the next day for the two of us.

Chicken Wing Dip
Yummy! Everyone who tasted this at a recent work party stated "It tastes just like chicken wings!" I took the advice of several other reviewers and switched out the ranch for blue cheese dressing and the cheddar for low-fat, part-skim mozzarella. I poached three chicken breasts in chicken broth, then added all of the ingredients to my food processor and pulsed until it was well blended. I increased the hot sauce to 1 cup, but will probably add more the next time. It wasn't hot enough for my personal taste, however was too hot for one of my peers. I didn't bake it in the oven as I made this the night before the party. Instead, I just heated it up in the microwave for about 5 minutes, stirring every minute to keep the cheese from burning. I will definitely take the advice of others and get a small crock-pot to keep this warm. I served it with Fritos and Celery sticks and it rocked!!! Thanks for such a great recipe!
