Grilled Peaches
I baked the peaches in the oven for 15 minutes at 350 degrees and flipped halfway through. I didn't have peppercorns so I simmered the balsamic with whole cloves instead. I drizzled the balsamic reduction over the cut side and broiled for 2-3 minutes, added the cheese and broiled for 1 more minute. I let them stand for 5 minutes, drizzled with some honey and then ate them as a dessert.

Carmel's Crunchy Pea Salad
For a healthy version, I used turkey bacon and fat free sour cream. It tastes great even without as much fat! I'm on The South Beach diet so I bring this as a sack lunch and add the bacon and cashews right before i eat it.

Panna Cotta
I made mine low-fat and sugar free. I used Splenda for all of the sugar but I only used about 2/3 of the amount asked for and it was plenty sweet. I substituted fat-free half and half for 3/4 of the cream and used the heavy cream for the rest. I also added 1/2 teaspoon of almond extract to add extra flavor. It was very delicious, very creamy and I didn't even notice the Splenda.
