Our main focus is cooking terrific meals on a tight budget. We have discovered so many great recipes that we hardly miss the pricier items anymore!

Spicy Rapid Roast Chicken
This was excellent! I doubled recipe and added cooking time, as our chicken was nearly 6lbs. Roasted breast-side down for the first hour, then turned over for an add'l 45 minutes. Couldn't find my oregano so I used thyme instead, and added a dash of garlic powder. Delicious! Drippings would have made great gravy, will do that next time.

Mom's Zucchini Bread
Delicious! Made exactly as written. I was concerned before I added the zucchini because the batter was VERY thick, like cookie dough. But it turned out terrific!

Kathy's Delicious Whole Slow Cooker Chicken
Delicious and thrifty (except the sesame oil, ouch that was expensive!) We will make again, definitely. I used an almost 5lb chicken and cooked breast side down, as the chicken was not completely covered by liquid. For the future, it really needs to be. It was so tender I had trouble getting it out of the crockpot - it just fell all apart. Great reheated the next day too. Not quite 5 stars - it needs a little extra "oomph" but I haven't figured out quite what it needs.
