Mexican Casserole
Made this according to recipe, did add peppers & onions, but it is really easy and tastes great. Husband loves it and asked for me to make it again the next week, he called it "upside down nachos."

Downeast Maine Pumpkin Bread
I have been experimenting with different pumpkin breads, this one is my favorite. super moist, perfect blend of spices... I make it exactly according to the recipe, no changes and it is a winner!

Black Bottom Cupcakes I
These were ok, I thought they needed more chocolate - I may try this recipe again and add more cocoa or some dark cocoa.
