Ham with Honey and Brown Sugar Glaze

This was good & easy. I simmered on the stove for a while & it didn't seem to thicken but after I pulled the ham out (basted numerous times in the oven) I put the sauce in a server & it was just the right thickness. I didn't use the cloves & only had OJ so I used about 1/3 of a cup.

Easy Roasted Pork

WOW! Awesome. I generously salt & peppered the pork then put it in a super hot pan with a little olive oil just to sear the outside. Then I put it in a small roaster with tinfoil over the top. I made some slits in the tinfoil. Because my roast was small (1.18 LBS) I used a meat thermometer to know when it was done. Once I pulled it out I let it sit with the tinfoil over the top for about 10 minutes. I sliced it then poured the sauce over the top. It was amazing, so tender and the sauce added so much. I will ABSOLUTELY be making this again. My husband said he felt like he was eating out!

Bean Soup With Kale

I made this twice in one week. The first time I made it strictly vegetarian, I made it after breakfast then heated it back on the stove at dinner. It was very yummy and there were no leftovers. The second time, I made it for my husband & added sausage & chicken broth. He couldn't get enough! Very easy & so nice and healthy with the kale and the beans!

Sam's Famous Carrot Cake

Very good, everyone liked it. I omitted the coconut & nuts. Next time I will add the pineapple but not the juice, the cake was just a little too moist. I used my cuisinart to shred the carrots, there was more to wash in the end but much easier than shredding by hand.

Made the frosting, not the cake. Good but a little too sweet, I would probably use 3 cups sugar next time rather than 4. Very easy to mix up.

Black Bean and Corn Quesadillas

Awesome!! I didn't add the pepper flakes because of the kids & I used peach salsa which I would highly recommend. For some of them I used leftover spicy shredded beef. They were pretty messy but delicious.

Blueberry Breakfast Sauce

Super easy to make and yummy! I will absolutely make again but I think that I will reduce the sugar. The sauce was plenty sweet, not too sweet but I like the idea of using this instead of syrup and cutting back on the sugar a little.

Banana Crumb Muffins

I love to bake but can never seem to get muffins just right, until now! I made these to go along with scrambled eggs and fruit salad as breakfast for dinner and I don't think anyone was even hungry for the eggs and fruit by the time the muffins were gone. Nice and easy and SO good.

My husband was bummed that I was making oatmeal raisin rather than chocolate chip but then he ended up eating more than anyone, he loved them. I used all butter rather than shortening.

Roast Sticky Chicken-Rotisserie Style

This was very good, I had a pretty big bird so I put it in for 4 hours. I think next time I will try and pull it out at about 3 1/2 hours. While it was cooking I was worried that it looked a little dry but actually the chicken was rather moist.
