These were really delicious and very flavorful! I used 2/3c. of cooked barley instead of the rice and added a touch of cumin (1/2 tsp.) along with the other spices in the mushroom / tofu mix. I also used 4 red peppers, cut lengthwise and seeded.

Lemon Cheesecake

This cheesecake was a bit lighter than I was expecting and the consistency didn't come out quite right because I beat the egg whites separately before folding into the remaining batter. Wouldn't recommend doing that; will try again as the recipe says. Served with a blackberry topping per another cook's recommendation, which was a great idea and finished the cake nicely!

Eggnog Custard

Pretty good. Tastes like eggnog flan but without the sugar syrup (which would be a nice addition). Nothing too exciting or special, but a nice way to use up eggnog after the holidays.

Eggnog Quick Bread

Recipe was a little dry but will a nice, subtle eggnog / nutmeg flavor. Will try again with more eggs or applesauce or something to see if that helps make the cake more moist.

Indian Tandoori Chicken

Had to quadruple the spices with just a bit more than 2 x the water to coat about 1 1/2 lb. of chicken pieces. Broiled in the oven for approx 5-6 minutes per side. The flavors and spice were scrumptious!

Easy Eggnog Ice Cream

This stuff was amazing! Wish I had used an instant custard mix instead of the instant pudding mix though (for the flavor). The ice cream turned out creamy, flavorful and delicious!

Washabinaros Chili

WOW! Delicious flavor! I used horseradish instead of wasabi as one cook recommended and ground turkey instead of ground beef. I used 1/2 the cayenne and cut down on the number of peppers I used for fear that it would be too spicy, but I wish I had added them all. The recipe would be perfect with all the spice called for; the turkey and sausage worked wonderfully together.

Raspberry and Almond Shortbread Thumbprints

I recommend adding a little less almond extract to the dough - maybe 1/4-1/2 tsp. instead of 3/4 tsp. And I only had to bake 10-12 minutes before these were done. Otherwise, perfect recipe!

Kheer (Rice Pudding)

Wonderful recipe, have made several times and always with great results and taste. Important to cook rice uncovered to evaporate some of liquid. Be careful not to overcook rice (will still be soupy when rice becomes tender, but thickens up a lot as it cools).

Tandoori Chicken II

Quadrupled the spice rub (except the red pepper flakes) for 2 lb. boneless chicken breasts, cut into large chunks. Was quite spicy anyway, but depends on type of curry powder you use. Broiled in oven for about 5-6 minutes on each side, checking frequently until juices in chicken run clear. Served with mango chutney. Was a HUGE success! Delicious flavor; very juicy and tender!

Tzatziki VII

Halved the yogurt, but it still made plenty (didn't have enough time to drain, so it was a bit runny, but still scrumptious!) Added 2 shredded Persian cucumbers (fewer seeds, more flavor), about 6 cloves garlic and the juice from one lemon. Delicious!

Garlic Potatoes Gratin

Delicious! Sprinkled the layers in between with a little flour to help with the separation that other reviewers mentioned. Cooked in a slightly smaller dish, so ended up with three layers of potatoes, topped with the garlic and cheese and sprinkled with a Parmesan to top for a little kick. Baked for 1 1/2 hours with thicker potato layers. Turned out perfectly!

Beef Stroganoff III

Used tri-tip, sliced thin, and cooked less than the recipe called for as the meat was done pretty quickly. Added shallots to the garlic and sprinkled with fresh parsley at the end for color. Had a lovely flavor, though it seemed like it needed something and the broth was a bit thin; otherwise a great recipe!

Rum Raisin Ice Cream

The recipe is delicious, but is a bit on the sweet side for me. I'm not a fan of instant vanilla pudding and the flavor comes through a bit, so I wonder if there's a better substitute - maybe a custard mix? Otherwise was an absolute hit and the taste of the rum came through wonderfully!

Chocolate Chocolate Chip Nut Muffins

These muffins tasted scrumptious, but I had a bunch of trouble with the baking. It took about 30+ minutes before the muffins set and I ended up having to put them back in the oven to re-bake after the first 25 minutes. Even then, the muffins did not rise well and stuck to the bottoms and sides of my greased muffin tins. I think a little more flour, filling the cups only 1/2 full instead of 3/4 full, or using muffin cup liners, or a combination of all of the above would have helped tremendously. Am definitely going to try again though!

Banana Prune Muffins

These muffins seem a bit odd at first with the prunes, but once you get used to the idea, they're really pretty tasty. A nice, healthy breakfast food. Better-tasting the second day after the spices have developed their flavor in the muffins.

Oatmeal-Currant Scones

Added 2tsp. orange zest and substituted 1c. of the flour with white wheat flour. The scones were a little bit dry, but were nice and flaky and quite delicious with a bit of jam.
