Meatless Stuffed Peppers
These were really delicious and very flavorful! I used 2/3c. of cooked barley instead of the rice and added a touch of cumin (1/2 tsp.) along with the other spices in the mushroom / tofu mix. I also used 4 red peppers, cut lengthwise and seeded.

Lemon Cheesecake
This cheesecake was a bit lighter than I was expecting and the consistency didn't come out quite right because I beat the egg whites separately before folding into the remaining batter. Wouldn't recommend doing that; will try again as the recipe says. Served with a blackberry topping per another cook's recommendation, which was a great idea and finished the cake nicely!

Eggnog Custard
Pretty good. Tastes like eggnog flan but without the sugar syrup (which would be a nice addition). Nothing too exciting or special, but a nice way to use up eggnog after the holidays.
