About this Cook
My favorite things to cook
Cook a lot of chicken. My wife doesn't eat pork or red meat, so I usually cook with chicken, turkey, or fish.
My favorite family cooking traditions
Thanksgiving is my favorite time of year. We always have dinner at my parents' house, but I usually cook all the turkeys. I do one in the oven, and I deep fry one about 2 hours before we eat. There is nothing better than waking up Thanksgiving Day to the smell of a turkey cooking in the oven.

Tortilla Chip Casserole
Made this for dinner tonight. Perfect for the crumbs at the bottom of our chip bags. Use blue and white corn tortilla chips. Drained the can of rotel so it wasn't as runny as others said. Great quick meal, just wish I hadn't eaten so much of it.

Santa Fe Chicken Salad
Make this salad quite frequently. Only substitution I make is to use Fritos and Hidden Valley Spicy Ranch Dressing. The marinade is what really makes it though.

Laura's Quick Slow Cooker Turkey Chili
Liked the recipe overall. Used 2 cans of Rotel instead of tomato soup. Still would have liked there to be a little more of a kick. Maybe use more red pepper flakes.
