This was great. Very easy to make and very versatile. My husband thought it needed some spice (hence the four stars). I will add some chopped jalapenos next time for a kick.

Brown Sugar Meatloaf

Wow! Absolutely the best and most moist meatloaf I have ever had. I substituted the bread crumbs for oatmeal since it was all I had on hand and it was still FABULOUS! I also squirted about a tbs of ketchup into the mix with a sprinkle of brown sugar. Yum!

Chicken Fajita Marinade

This marinade made my chicken very tender and juicy. The flavor was light and delicious but I felt that it needed a little more "oomph". Maybe some more cumin and some onion powder would have done the trick. I will definately try this again with a few adjustments.

Italian Pasta Salad I

This was so versalite! I love it. I adjusted my salad based on what I had on hand. I used the two dressings, chopped white onions, cucumbers, chopped tomatoes, celery, kalamata olives and whole wheat spaghetti (broken into pieces). It was so light and delicious. Perfect for a hot day like today.

Chorizo Breakfast Burritos

My family is Mexican so we grow up eating chorizo and eggs regularly and I have to say I have never had chorizo with onions and eggs. I thought it was delicious! I use soy chorizo now that I am grown since it is less fatty. My husband loved this (although we did not serve it as burritos, we made tacos instead using corn tortillas). I used about 1/4 less of the chorizo than called for since we made used some earlier in the week. It was great!

Slow Cooker Pozole

Very good basic recipe. Pozole is eaten with shredded cabage, diced onions, lime, sliced radishes, and sometimes cilantro or oregano sprinkled on top and tortillas rolled up in the palm of your hand to dip in your soup.

Chicken Enchilada Soup III

I decided to give this a try since I had all the ingredients on hand (yes, even the masa harina from when I made tamales for my husbands birthday). I found the taste good but lacking something. I added some extra cumin, salt, chili powder and a can of drained corn. I fried tortilla strips and seasoned those with garlic salt and cumin. Those I used as toping. I also added a bit more cheese. Although I found the flavor very good it did turn out a bit gritty. I'll definately use this recipe again since it was so good but I'll continue to tweak it as I go. Thanks for sharing!

Cake Mixes from Scratch and Variations

I tried the chocolate variation and my cake came out fluffly, not too sweet with a very "bread" flavor not cakey flavor. it was good. I used store bought chocolate frosting on it and it balanced out just right since the flavor of the cake itself is not too intense. Mine took about 10 minutes longer to cook in the center and the edges were a tad crispy but still good. I'll make again just keeping a closer eye on the time so that I dont over cook it. With baking it's important to make sure your measurements are EXACT and you follow the recipe as stated. I think that's what some of the bad reviews are really about...people not following directions and messing with the measurements. The batter seemed thick to me but the cake density was fine once baked.

Whole Wheat Muffins

I have a very picky 8 year old who wants everything 'plain'. I was looking for something healthy that he could have for breakfast on our way to school. This was perfect. He enjoyed these lightly sweet muffins with a tall glass of milk.

Bacon Cheese Frittata

Very easy and good. I made this with turkey bacon and 2% cheddar cheese (to cut down on the fat due to DH cholesterol). It was delicious but a little on the salty side. I think next time I will use only half the salt suggested. Otherwise this is perfect.

Garlic and Onion Burgers

Very juicy burgers. I added 1 tbs of montreal grill seasoning to the mix. It was a lot of meat for just my small family so the next day I used the already prepared meat to make meatloaf. It was THE BEST meatloaf ever! I added 4 tbs of ketchup, 1 cup of uncooked oatmeat, a pinch of salt and one egg. I made a ketchup sauce with 1/2 cup of ketchup 1/3 cup of brown sugar 1/4 cup of lemon juice and 1 tsp of mustard powder and glaced the meatoaf the last ten minutes of cooking (I cooked the whole thing for about 1 hour 15 minutes. I will use my new creation as my new favorite meatloaf recipe.

Glazed Meatloaf I

I had left over hamburger meat already seasoned with steak seasoning, salt, pepper, onions, garlic, worsteshire and italian seasoning. All I did was add some of the ketchup sauce and I used 1 cup of oatmeal instead of the bread. The meatloaf was absolutely to die for!

Cake Mix Cookies I

These were quick and easy to make. I used french vanilla cake mix and only one cup of chocolate chips. It took about 15 minutes for mine to be done for some reason. They were very sweet and soft.

A Different Carrot Raisin Salad

I made this as a side dish for the adults at my son's 8th birthday party and the grown ups who actually tried it raved about it. I give it a four because not many people cared to try it. I myself found it delicious and would definately make it again for myself and my family but not for gatherings. Maybe I will play a little with the presentation to create more appeal.

Tortilla Rollups IV

I made this as one various adult appetizers I served for my son's 8th birthday party and it was gone within the first 15 minutes. Everyone asked for the recipe and couldnt eat just one. I added one green bell pepper and one yellow bell pepper for crunch and kalamata olives (which I sliced myself)for a bit more flavor. I'll be making these for xmas as well. Love it!!

Easy Cheese Ball II

I made this to serve at my son's 8th birthday party and although the kids did not touch it the adults raved about it. This recipe made three baseball size cheeseballs which I served with assorted crackers and toast rounds. Fabulous, will definately make again.

Meatball Soup

Delicious and Hearty. I added 1 extra can of tomato sauce and two tablespoons of tomato paste to thiken it up. A also added potatoes and half an onion chopped and used turkey meatballs. Perfect on a cool day!
