Roasted Tomato Salsa I
I did what other reviewers suggested and cored the tomatos and peeled the garlic before roasting which was wise. Aside from that, I prepared it as written. It was good, but very watery. Next time I'll seed some of the tomatos and I also like my salsa spicier, so I'll add another jalapeno.

Spinach Rice Casserole
I did like some of the other folks and added about 4 cloves of garlic. I also put in a can of drained petit diced tomatoes. Everything else was as written and it turned out great!

Marinated Baked Pork Chops
This was great! Even though, like some other folks I changed things a bit. I didn't have worchestershire sauce or ketchup when I thought I did, so I subbed extra soy sauce and chili paste. Then, the oven was occupied, so I cooked them on the stove. Super good.
