Spicy Southwestern Slaw
I took some liberties with this recipe to avoid having to run to the grocery store, but I think I captured the spirit of the thing and it turned out FABULOUSLY! My substitutions included: green onion for the onion, a small can of diced green chiles for the jalapeno, skipped the cilantro as I didn't have any on hand (although it would've been better with it), used a mixture of vegetable and olive oil, and used a combination of chili powder and Frank's Red Hot Sauce in place of the cayenne. I also added one can black beans and one can garbanzo beans, drained and rinsed, in order to make it more substantial. I took Dinah's advice and didn't measure...just eyeballed and threw stuff together. It was yuuuummmmmy!

Hamburger Rice Soup
Very, very yummy! Way too much salt called for. Use only about 1/3 of what's called for. Also, I tripled the amount of rice. Next time I think I will add more vegetables. Green beans, corn, fresh greens, and turnip would all be good in this. I doubled the recipe to have some to freeze for later. It froze very well.

Stuffed Pepper Soup II
I just made this recipe for the first time, and really like it, but think it goes overboard on the ground pepper. Next time I will reduce the ground pepper by about half. Otherwise a very yummy, easy meal.
