Soft Christmas Cookies
Excellent sugar cookie! I made Valentine cookies for work and everyone raved about them! Perfect soft chewy cookie. A couple small changes...I too used butter instead of margarine as others suggested, and cooked them at 350 for 10-12 minutes.

Sugar Cookie Frosting
Very good tasting frosting, nice and creamy and my friends all loved the cookies (used the Soft Chrismas Cookies recipe from this site - wonderful cookie!) I just wasn't too happy with the way the frosting looked on the cookies, not real smooth like I like for sugar cookies, had to add some colored sugar sprinkles on top. I'm still looking for the perfect frosting...

Fettuccini Tomato Rustica II
Delicious!!! My whole family loved this, even my 3 year old son! It tastes a lot like Penne Mediterranean from Bravo! I added some sauteed spinach and pine nuts to make it taste much like that dish. I also made a few changes... I used whole wheat penne pasta instead of fettuccini, and I added a few drops of olive oil to the boiling water to keep the noodles from sticking together. I did not add the one cup of olive oil as others suggested, but added the oil from the sun-dried tomatoes instead. I used light ricotta cheese. I will definitely be making this again and again!
