Jalapeno Chicken II

My husband, a man who rarely cooks, & even less often cooks something good, decided to surprise me with this dish. WOW! Not only was I treated to a delicious dish, but he is now getting more brave & trying to create new dishes. We have made it as written & we have made it substituting fresh Hatch chilies. Excellent both ways. If you like jalapeno poppers & grilled chicken, you can't go wrong with this recipe!

Serbian Ground Beef, Veggie, and Potato Bake

We loved this dish! Wasn't sure about the cinnamon/clove addition, but it is a great flavor in this dish. The only changes I made were to add 2 crushed cloves of garlic & to increase the liquid a bit. Otherwise as written. Nicely spicy. Next time I may uncover for the last half of cooking to brown the top a bit. My husband asked that we make it again soon! Thank you amanda!

Lemon Horseradish New Potatoes

Wow! These were surprisingly delicious! I'm not a big fan of horseradish, but my husband is. I made these for him, but I LOVED them. They had a zip to them from the lemon horseradish combo that really lit up an ordinary meal! Will be making these often!

Pineapple Bread Pudding

We really enjoyed this! Much less "custardy" that most, which is what my husband doesn't usually like about bread pudding. Not overly sweet either. Used golden raisins.

White Chocolate, Chocolate Cookies

These cookies turned out perfectly for me! I reduced flour by 1/4 cup, added tsp. vanilla & a bit of salt. Also 1/2 baking soda, 1/2 baking powder. Did 1/2 the cookies with white chips & the rest with peanut butter. They were perfectly soft, puffy, crispy at the edges. Thank you!

Orzo with Parmesan and Basil

Enjoyed the flavor of the finished product. Found that all of the liquid absorbed very quickly & needed to add more. Also, it became a big stuck together mess before everyone had a serving.

Honey Roasted Red Potatoes

My husband absolutely loves these potatoes! I double the honey & add a bit more salt than called for. The last time I made these I just cut a sweet onion in big chunks also & cooked right with the potatoes. I really wasn't expecting to like these, but they have become a favorite!

Pancit

Loved this recipe! Didn't use shrimp but ahve made this with pork & chicken. Both very good. Have made it with rice noodles & actual pancit noodles. Good both ways. Very simple dish. I hae had pancit many times made by phillipino friends & this is pretty close. I do add a little bit of fish sauce for a more authentic flavor. This gets made frequently at our house.

Turkey Pot Pie

My husband & 14 year old son go crazy for t his recipe! I'm lucky to get a full serving! Have made this a few times. I freeze leftover turkey, 2 cups per bag, just for this recipe. We do like a little more saue so I add either some turkey gravy or a bit of cream of chicken soup & a touch of poultry seasoning. Pre-baking the bottom crust for 5 minutes or so is also something I recommend. Ultimate comfort food.

Brandied Candied Sweet Potatoes

My husband couldn't stop raving about these sweet potatoes. I thought the alcohol taste was a little overwhelming & I would suggest reducing the sauce down to be more like a glaze before adding the potatoes. Very easy. Will continue to make it for husband but will try cutting back on the brandy next time.

Holiday Cranberry Sauce

This is amazing! My husbands told me to make sure & buy him a can of the jellied stuff because he hates real cranberry sauce. He is STILL raving about it. I caught him using on toast this morning like jam. The spice mix is key. It imparts a unique flavor to the sauce unlike any other I have had. I will be making this every thanksgiving! Thanks for the EASY & DELICIOUS recipe!

Grilled Tilapia with Mango Salsa

Pear Pie III

This was delicious! I sliced up 4 very ripe Bartlett pears & used 1/2 the amount of sugar. My husband & I ate half of this pie the first night! The custard with the delicate pears was a beautiful combination. I will make this anytime I have a few ripe pears that need to be used up.

Best Peanut Butter Cookies Ever
