Butternut Squash Soup
This was wonderful. I roasted the squash with some Olive Oil, Cinnamon, and Coriander for about 60 minutes. I added a diced potato to the soup mix to thicken a little. We just added a spoon full of cream cheese to our bowl and it was perfect. I will be making this recipe a lot :).
