Crunch Bar

Perfect and so fast and easy to make! Followed recipe using milk choc chips and pecans. Think I will reduce nuts by 1/2 C next time. By the way, 4 oz. saltines is one sleeve. I let the pan cool for an hour or so and then put into the refrigerator for another hour. Lifted a corner edge and started breaking apart. No problem removing from the pan. This recipe will be a family favorite - thanks!

Shrimp Fettucine Alfredo

Yum! This was delicious and so easy! Made a slight substitution based on what I had - 1/2 C half-&-half, 1/4 C chicken broth, 1/4 C white wine. 1/2 lb fettuccini was plenty for this recipe. Reminded me of a favorite dish from Shell's seafood restaurant.

No Bake Chocolate Oat Bars

I think this recipe has potential but needs some tweaking. 1 C of butter is just way too much, result was greasy oatmeal. Will try again with more brown sugar, less butter and bringing to a boil before adding vanilla and oats. Microwave works great for melting chips and peanut butter together.

Sweet Potato Souffle III

Excellent recipe, just cut the sugar in half. Way too sweet otherwise. Hard to call it a side dish when it tastes like desert. Don't scrimp on the topping. Yum!

Mom's Buttercream Frosting

This was a nice, lighter-tasting change from the traditional recipes. Found it was not sweet enough for our taste so added about 1/4 C powdered sugar and about 1/2 t more vanilla on top of the other ingredients. Hard to get away from the taste of the flour. Might be worth experimenting with cornstarch? Next time I will cover the bowl before chilling in refrigerator as I found a skin formed on top of the flour/milk paste making it a bit lumpy. Was able to beat it out with the mixer and it spread on the cake perfectly. Covered my 9-inch layer with ample frosting and it looked beautiful.

Stuffed Green Peppers I

Yum! Made as directed, adding a bit of stuffing to the pepper, a spoonful of sauce and then more stuffing. They were very moist. Had extra stuffing and just dropped it into the baking dish and covered w/ sauce. Will try red or yellow peppers next time. Using uncooked rice made the prep very simple. Easy & delicious recipe - thanks!

Amazing Pork Tenderloin in the Slow Cooker

After reading the reviews, I had high hopes for this one but was thoroughly disappointed. Followed the recipe but cut back on soy sauce as other reviewers recommended. Used Merlot wine - maybe that was the problem. Wine flavor was overwhelming. I'm going to try to salvage by making pulled pork and smoothering w/ BBQ sauce. I don't think this recipe needs a tenderloin. If you like the ingredients, seems that a loin roast or less expensive cut would be just fine. Won't be making this again at my house.

Fresh Rhubarb Pie

Perfect pie and couldn't be easier to make! I used a frozen pie crust and it came out beautifully. This is the first rhubarb pie recipe I have tried that was worthy of the rhurbarb. Pie was a bit soupy served warm, but the flavor was excellent. Refrigerated and served cold the next day - just right.

Kathy's Delicious Whole Slow Cooker Chicken

Skinning a whole chicken is a pain. I cut the wings off at the joint and used them to make the broth, along with the skin and the neck. Cooked a 5# chicken on LO for 10 hours - way too long and it fell off the bone trying to remove from the pot. Used toasted sesame oil and olive oil. I agree with other reviewers - could probably reduce the olive oil by atleast half. Next time I will try not to overcook. Good flavor though, better than most crockpot whole chicken recipes I've tried.

Tangy Grilled Pork Tenderloin

Followed recipe as directed. Reserved about 1/4 C of marinade for basting. Marinated for about 10 hours and grilled on our gas grill for about 30 minutes on LOW. Very tender & tasty, although I think I would like a bit more kick. Next time I may try increasing chili powder, perhaps a dash of cayenne? The leftovers will make great sandwiches. Thanks for sharing this simple & delicious recipe.

Corn Chip Crunch

A fun and easy recipe that made a big hit at the party. Had problems with sticking to the waxed paper. I think next time I will skip the waxed paper and just use a greased cookie sheet, same as making peanut brittle. I think dry roasted almonds would also be a good addition, maybe toss a few M&M's in at the end??

Garlic Broccoli

Yeeoow - we are garlic lovers but the garlic took the front seat on this recipe and overpowered the dish. I reduced salt as another reviewer suggested but was still too salty for our taste. If I were to make this again, I would seriously reduce measurements on salt and garlic. Don't have to worry about vampire attacks with this recipe!

Cocktail Meatballs

After reading the reviews of others, I knew I could take these to a party without "testing" at home first. I used a 2# bag of frozen turkey meatballs and baked according to directions. Then doubled the sauce recipe and put everything into the crock pot on LO. Doubling the recipe means you use 1 bottle of chili sauce and 1 can of cranberry. Wow - so easy and good.

Quick Chicken with Asparagus and Provolone

I added a bit of parmesan cheese to the breadcrumbs - yum! Seems like 1/2 can of chix broth would be plenty for next time. Very easy and elegant - will be a great company dish.

Salsa Chicken

My husband wasn't excited about the recipe - until he tried it! We thought it tasted like chicken enchiladas minus the tortillas. Great idea for low-carb menu. Sour cream is the crowning glory - don't forget this finishing touch. Yum!

Spicy Mexican Salad

Took this one to a potluck and it went over big. Used only 1/2 bag corn chips and that seemed like more than enough. This one gets soggy fast, so don't prepare in advance. I just prepped the ingredients and then tossed when I arrived, adding the chips at the very last. A very hearty salad. Add some taco meat and it becomes a worthy main dish.

Balsamic Vinaigrette

This is one of my all-time favorite dressings. I use the regular (not white) balsamic vinegar and fresh black pepper. Sometimes add fresh basil or rosemary if I have it. Simple and so delicious!

Easy Lemon Cake

I made this one for a birthday and it got rave reviews. I used a fork to poke lots of holes in the cake before covering w/ glaze. Followed another reviewers recommendation and added a dab of butter to the glaze, along with some freshly grated lemon rind. Fresh squeezed lemon juice made it all the more tasty. I think this one is even better the next day, moist and more lemony. Next time, I will make it the day before serving. Good & easy!

Slow-Cooker Chicken Tortilla Soup

As other reviewers have suggested, I used boneless/skinless chicken breasts and let them cook w/ the soup. Chopped and returned to the soup shortly before serving - melt-in-your-mouth tender. Used homemade chix broth in place of the canned. Served with a dollop of sour cream and some shredded Mexi-cheese, w/ crushed tortilla chips on top (no need to make your own) Easy and FABULOUS! Saving the leftovers in the freezer to enjoy another day.

Layered Salad

I followed the recipe except I used a bag of salad mix (iceberg & carrots mostly) in place of the lettuce. Used only 1/2 small onion (green onions would be good too). Don't leave the water chestnuts out - they make that extra "crunch" you need. Took this one to a ladies gathering and got rave reviews and requests for the recipe - it was soooo easy. This goes into my permanent file. Thanks for sharing!
