Ground Turkey and Sausage in Red Beans and Rice

I used vegetable broth to cook 1/2 the rice called for in and used ground turkey instead of beef. Used 1 can of black and one can of kidney beans and added corn. With a little cheese over the top, it was very good.

Southwestern Pasta Salad

Remember to mix the spices in the oil before mixing in with the pasta. It does make a difference...as I found out!! Very good, even with less oil. Leftovers evaporate.

Husband loved it! Used fresh herbs and a little extra. I think I will try cooking the rice with it next time to soak up some of the extra juice.

Carol's Arroz Con Pollo

I added cumin in place of the saffron, cilantro for the parsley, and water for the wine, then added mushrooms. I added the veggies a little later in the process so they were a bit firmer the second time and it really did the recipe justice. Everyone loves it and it's a regular in the rotation now.

Baked Honey Mustard Chicken

I omit the salt and use stone ground mustard. This is always a hit and the extra sauce that has been cooked gets used over mashed potatoes. If I need it to cook a little faster, I flatten the meat out until it's about a 1/2" thick.

Made it without the cheese or cayenne, added crushed garlic and used red bell pepper in place of zucchini. With some pico and sour cream for condiments, this was delish. Looking forward to leftovers!

Cottage Cheese, Avocado, and Black Bean Salsa

Absolutely love it! The origin of the recipe invites changing it up based on what you have on hand. Definitely like it with fresh tomatoes, lots of cilantro and lime juice. I've added about half a cup of organic salsa when I was low on tomato and that worked, too. Usually settle for the quicker canned or frozen corn. It has been a huge hit at parties and pot lucks.

Italian-Style Quinoa-Stuffed Sole

Prepared as described and had a few issues. First, had to change oven to bake to generate heat from underneath to get fish cooked thoroughly. Second, it was a bit bland. If I make this again I will add fresh oregeno and lemon juice to the stuffing. I do appreciate how healthy this recipe is and think it is worth experimenting with.

Ground Turkey Noodle Bake

Good base recipe. Added a lot of spices (more garlic, fresh basil & oregeno)in with the browning meat, and extra tomatoes. Also, I didn't melt the cream cheese separately, but mixed it in to the hot noodles with the milk (used soy), garlic & parsley and it worked fine. Fewer dishes the better here!

Chicken Cilantro

Garlic and Ranch Turkey Burgers

Very good. Added less than a 1/4 cup of plain bread crumbs to 1.25 lbs. ground turkey and used just shy of a 1/4 cup of worceshire sauce and they turned out great. I ended up using my panini press to cook them because it started to rain hard when the time came. I bet they're even better on the grill.

Southwestern-Flavored Ground Beef or Turkey for Tacos & Salad

The first time I made this, I cut back on the seasonings because I thought it would kill my husband (he's not overly fond of spicy food). It is far better with the called for amounts and still isn't a mouth-burner. It was a huge hit for burritos and for dip.

Smothered Chicken Breasts

I cut the amount of brown sugar in half and used green onions. OMG was this good! I have made a similar recipe using browned fresh mushrooms and cheddar cheese, seasoning the meat with fresh ground black pepper and Mrs. Dash Original. The sweet onion sauce was a great change, though!
