Chicken Tortilla Soup V
My family really enjoyed this-it can be altered easily to suit your taste. I sauteed the garlic and onions before adding the chicken. I did add a bit more garlic than it called for-we love garlic). I used several different types of broth-chicken, chicken & garlic, and beef. One of my kiddos has a very sensitive palate so I cut back on the chili powder but added a 1/2 package of mild taco seasoning. I used a salsa that was very mild and not chunky (kids preference). I also added 2 cans of black beans. Served it with tortilla chips on the bottom, colby jack shredded cheese and a dollop of sour cream. Hubby and I used tobasco to spice ours up a bit. If I were making it for just my husband and I, I would sautee a can of green chilies with the garlic and onion and use a different hotter salsa. I would also consider upping the cumin/chili powder and add a canned of diced tomatos. I will certainly make it again-the kids have already claimed the left-overs for their lunchboxes tomorrow. :)

Whit's Chicken Enchiladas
Awesome-family loves it! I often use canned/foil pouched chicken and simmer them a bit with a packet of taco seasoning mix for more flavor...come out perfect every time!
