Self-Filled Cupcakes I
I followed others advice to put in 1/4 cup of chocolate before the cream filling. I feel I didn't put enough cream filling in each cupcake for fear it would seep out the sides. There was only a hint of the cream filling but everyone still loved them

Amazingly Easy Irish Soda Bread
I followed the recipe except added finely grated cheddar cheese to the mixture. I placed the patted down circle of bread in a pam sprayed cake pan. It made a circular loaf with a little peak of goldend brown goodness. I served it for a dinner party and we couldn't get enough. I baked it at 350 degrees for 45 minutes.

Antoinette's Strawberry Freeze
This was delicious when I made it. I put it in 12 individual small bowels and froze it over night as recommended. I got it out 1/2 hour before serving and it was like licking a popsickle. I suggest taking it out of the freezer 1 hour before. It was so good softened and a huge disappointment frozen. Either serve it immediately or make sure you take it out in plenty of time to thaw.
