Jalapeno Popper Spread

Reviewed: Dec. 3, 2009
This is a wonderful appetizer recipe. It is so delicious and couldn't be easier to make too! I added 1/2 cup panko crumbs with grated parm on top before putting in the oven at 375 for 1/2 hour. I served it with baguette slices, which was good, but next time I will serve with baguette slices, pretzels, and triscuits, I think the last two taste great with this dip. This is a perfect football party dip but was good enough for a ladies' holiday party for me!

Aunt Teen's Creamy Chocolate Fudge

Reviewed: Nov. 16, 2009
This is a GREAT fudge recipe, very easy to make and delicious! I made a couple of small changes. I reduced the sugar to one cup, and used and equal ratio of milk chocolate chips and semisweet chocolate chips (1 and 1/2 cups of each). I stir for exactly five minutes and it's perfect! I've made it a couple of times already and this will definitely be a go-to when I need something sweet to bring someone and don't have a lot of time to make something more elaborate. Thanks for a great recipe!

Double Layer Pumpkin Cheesecake

Reviewed: Oct. 4, 2009
Outstanding recipe! I made life easier on myself and used pumpkin pie filling instead of pumpkin puree and the spices. I did double the vanilla and added extra cinnamon on top and in the mixture. When layering, I put 1 and 1/2 cups of the cheesecake mixture on the bottom to make the bottom layer a bit thicker, and then placed it in the freezer for five minutes before adding the top pumpkin layer. Delicious and easy, will definitely make again!

Pumpkin Fluff Dip

I can't believe I haven't reviewed this yet! I have made this many times and it always is a huge hit at parties, especially when served in a pumpkin this time of year. It couldn't be easier and people always seem impressed, doesn't get much better!

Triple Berry Sorbet

Reviewed: Sep. 15, 2009
This recipe is incredible! I am just sorry I made it for someone else. It's the perfect blend of sweet and tart. Like another reviewer, I had to sub fresh strawberries instead of cranberries because I couldn't find either fresh or frozen cranberries. I strained the pulp as directed but kept a little bit of it in the mixture because I do like having some fruit remnants in a sorbet. I used fresh limes for the juice. I made this for a friend who had her wisdom teeth removed and I hated to give this away, I will be making this again soon!

Pollo Fajitas

Delicious! We really enjoyed this marinade for fajita night. My only change was to reduce the chili powder a little bit because of having little ones. We will definitely use this again.

Mango Lassi II

YUM! I omitted the sugar and used a Splenda packet and used fat-free yogurt. I also used frozen mango. It was thick and delicious! Good for a sweet fix.

Grilled Peaches and Cream

Reviewed: Aug. 21, 2009
This is easy and delicious! I made a few changes to make it healthier. I subbed light cream cheese (only needed 1/3 cup) and mixed it with equal parts fat free yogurt. I put one tablespoon of honey in the cream cheese/yogurt mixture to sweeten it up. I omitted the oil, just used cooking spray to keep the peaches from sticking to the grill pan. Before serving I very lightly drizzled honey over the peach. YUM! Would also be good with a tiny bit of brown sugar on the top too. Edited to add: I forgot to mention that I topped with cinnamon, it added a lot!

Romesco Sauce

Reviewed: Aug. 21, 2009
SO flavorful and fresh tasting! I didn't use the bread and used only 1/3 cup olive oil. This was SO much better the next day, I highly recommend making it a day ahead of time. It was tasty a couple hours after making it and having it sit in the refrigerator, but even better overnight. The Italian in me wants to add chopped basil to this recipe, though I know that takes away from its Spanish authenticity I know that would be an excellent addition. I'd also like to try this with pine nuts sometime. Thanks Angie, I will be making this again!

High Protein Peanut Butter Balls

Reviewed: Aug. 15, 2009
This is a great recipe! I was looking for a high protein snack for after workouts when I didn't feel like making a smoothie or when I needed a sweet treat without the sugar and this is it. I used organic crunchy peanut butter but I think this would be also great with smooth peanut butter. I also think that you could use regular unsweetened cocoa powder if you don't want to use the protein powder or don't have it (a great alternative if you are making this for the kids). Of course, that decreases the protein, but still provides a healthy snack. The next time I make these, I will refrigerate the mixture first before I roll into balls because the mixture was very mushy and difficult to make into balls. No problem, easily fixed, but mine didn't turn out as pretty as the recipe submitter. They still taste great! Thank you for the recipe!

Creamy Chicken

Reviewed: Aug. 12, 2009
This is a simple, quick, and tasty meal. I put rice on the bottom of the pan, enough liquid for the rice (usually half broth/water), the chicken on top and cook it covered for 30 minutes, uncovered for 45 minutes. I add poultry seasoning to the spices.

Tasty Lentil Tacos

Reviewed: Aug. 10, 2009
This was a great substitution for meat! My daughter and I loved it, my husband agreed that it tasted just like the real thing but he had a difficult time with the different consistency. A great healthy alternative to meat tacos, I really enjoyed this.

Brooke's Best Bombshell Brownies

Reviewed: Aug. 9, 2009
WOW,WOW,WOW!!! These are some of the best brownies I've ever had. Certainly the fudgiest brownie I've had, which I prefer. This is very rich-tasting, so a smaller piece of brownie satisfies, but I could certainly eat more. I will make these again! I subbed brown sugar for half of the sugar in the recipe.

Unbelievable Chicken

Reviewed: Aug. 9, 2009
This was a good marinade. I reduced the sugar by half and I still thought it was sweet-tasting. I thought the lime was a tad overpowering and next time will reduce that a little bit. We will make this again. I served this with the Japanese zucchini and onion recipe from the site and it was a good combo.

Japanese Zucchini and Onions

A very tasty side dish that my whole family loved! I used sesame seed oil instead of vegetable oil. I didn't use the teriyaki sauce, just soy. My 18-month-old held a slice of zucchini in each hand and kept eating more and more!

Blueberry Turnovers

Reviewed: Aug. 9, 2009
I'm rating this a five-star recipe because it is SO easy to prepare and still delicious! My husband really loved this recipe. I think that I personally prefer to use puffed pastry for turnovers, but this recipe is perfect if you don't have a lot of time but want to create an impressive brunch treat or dessert. I made a buttercream icing and drizzled it on top. Simple, easy, and delicious, and a fun project to do with my daughter!

Baked Beans, Texas Ranger

This is a good recipe but very spicy as is in my opinion. My guests seemed to like it, but I wasn't expecting it to be as spicy as it was and I halved the chili powder! Maybe just my taste buds. It did have a good flavor, though.

Jay's Signature Pizza Crust

This is SO easy to make and delicious! I added garlic and onion powder for extra flavor. I used a pizza stone to make three smaller pizzas. It was a fun pizza night, everyone had what they wanted, and not to mention, cheap! We will make this again and again. I will try again with whole wheat flour.
