Yum. I did change this recipe up. I excluded the olive oil on the advice of some of the reviewers. I only used one large avacado, as that is all I had on hand (although at this point I wish I had two!). I added a couple of cloves of garlic, minced. I will be omitting the onion next time, or maybe mincing it really well. Or maybe substituting onion powder. And I added about a fourth of a cup of finely chopped cilantro. The cilantro really adds to the guac, but make sure it is as finely chopped as possible.
