Apple Stuffed Chicken Breast

Really good - wasn't coordinated enough to wrap it so I make the apple/cheese/bread crumb/curry mix and stuck it all on top of the chicken breast, then put it in the oven on 350 for about 45 min - delicious!

Oatmeal Whole Wheat Quick Bread

This was really good, even after accidentally adding extra salt. I doubled the honey, as suggested, and will probably add even a little more next time. I also added some cinnamon. I baked it in a small glass pyrex dish and it came out great in the amount of time called for. Great fast filling bread - it reminded me of some of the lighter and sweeter brown breads I had when in Ireland. Great with strawberry jam.

Sausage Barley Soup

Delicious! I used hot Italian sausage, cut into chunks, and it gave the soup such a kick. I used two carrots and a little more barley (1/3 cup) as suggested, tossed in some dried basil/oregano/garlic salt (didn't have Italian seasoning on hand) and skipped the spinach, as I haven't had luck with keeping spinach non-slimy in soup. It was so good! We heated up the left-overs the next night and it was still just as delicious. The light chicken broth complemented the spicy sausage really well.

Avocado Blast

This was great - and I'm not an avocado fan at all. I left out the dry milk and it was just fine. Really complements a tangy, spicy meal as it's blandly sweet in an avocado-y way - had it with marinated steak, asparagus, and stuffed portabello mushrooms and it was really refreshing during the meal. Thanks for a unique drink!

Breaded Parmesan Chicken

Delicious! Easy to make too. I made 3 chicken breasts with the given amount of coating and it worked well. I didn't have stuffing so I used 1/2 cup of Italian bread crumbs, and replaced the Italian seasoning with crushed Italian croutons. I brushed on olive oil instead of melting butter on the chicken and then coated it, and it came out perfectly after baking it 15 min per side. I added some mozarella on the top after turning them. Great! Served it on top of pasta tossed with olive oil and oregano with sauteed red peppers on the side.

This was amazing and so delicious. It took the entire afternoon to make though. I also think that you could get away with making half the amount of ganache. I agree with the other reviewers that the icing is hard to spread. Overall though, this was absolutely delicious and worth the time!

Italian Herb Bread I

This was a delicious first-attempt at bread for me. The only thing I would recommend is that if you substitute garlic salt for garlic powder, don't add the regular salt at all, or it will come out very salty (still good though!). I did not add onion powder either, and used Parmesan cheese instead of Romano, and it came out delicious and soft.
