Beer Batter Fish Made Great
Very satisfying and so easy! Used spices mentioned + Old Bay, from user suggestion. Cut out the beer/flour and used whipped eggs/crushed saltines instead-I highly recommend it. The saltines create a crunchy texture and very little waste, compared to using flour for the batter/dredging.

Viva Madrid Spanish Chicken
Simple and delicious! I halved the recipe and used 4 dates and 4 slices of bacon. I found the bacon flavor to be overhwelming, so I would use 4 bacon slices and 4 dates for the entire dish. The sauce was also very sweet, so I added balsalmic vinegar which balanced the flavors. Also, I subbed oregano, cilantro/parsley for the thyme. And finally, I paired with simple saffron rice which soaked up the strong flavors. Yummy!

Simple Whole Roasted Chicken
Not a homerun, but could have been due to using too much clove powder when I doubled the recipe. I was also out of nutmeg, so I used pumpkin spice. I made a gravy from blending the cooked onion with the drippings = delicious.
