Fabulous Zucchini Grinders
The 1st time we made this it was ok, but it had plenty of potential. The 2nd time around it was FANTASTIC! Here is what we did: 1) We did NOT toast the rolls first as they came out too crunchy. 2) As others suggested, we dug out some of the bread after we semi-split them to allow more room for the good stuff. 3) We used a mix of sliced & shredded mozzarella. The slices went into the dug out part, some of the shredded went along the bottom of the unsliced part of the roll. This prevented the rolls from getting mushy. 4) We added sauteed onions & garlic. This added to the flavor A LOT!! 5) We also sauteed the zucchini until it was MORE than tender. 6) We added Lightlife Smart Ground "Beef" crumble for extra protein. I'm sure real ground beef would be just as good. 7) Topped the rolls with with the remaining shredded cheese. This will be become a regular in our home! Enjoy!

Chicken with Couscous
How disappointing! My husband & I were really looking forward to this dish. It was surprisingly bland. We even thought we'd take the chance and put all of the jalapenos in that the recipe called for even though other reviewers warned against. In the end it was just ok, but nothing special. Actually, the dish wasn't spicy at all. I guess it's because I was careful not to let any seeds or membrane (the spicy parts) fall in when I was chopping. We felt that the recipe was missing something very important, we just couldn't figure out what it was. We decided that this dish was not worth tweaking. Will not make again.

Teena's Spicy Pesto Chicken and Pasta
My husband & I really enjoyed this recipe. It was quick, easy and yummy. I did make a few changes, but not many. Since we don't eat meat, I used Trader Joe's Soy Chicken. We like pesto, so I added more. I also sautéed some onions and added some defrosted peas at the end. Yum! Will make this again.
