I have made this twice, and everyone loved it. It is not as good, though not nearly as much work, as a traditional coconut cake, but, oh boy, will it do in a pinch! If you are thinking of trying this for the first time--well, it tastes just like a Pepperidge Farm coconut cake that you get from the freezer section of your supermarket.

This was fabulous! We are overseas and don't much care for the very stale bread available at the grocery store. This recipe has enabled us to have toast, sandwiches and bread with meals. Thank you, Jennifer.

This is terrific. I made a vegetarian version and used it for Chicken Parmigiana last week and Stuffed Shells this week. It also freezes beautifully. Thanks, Jeanne! I owe you one.
