Cheryl's Spinach Cheesy Pasta Casserole
This was very good. I only gave it 4 stars because I felt like I needed to modify it to make it 5 stars. I basically doubled the cheese but cut the olive oil amount in half. I also used fresh spinach and cooked it down with 1/2 onion minced and 2 garlic cloves minced. I also bloomed about 1/2 tsp of oregano and a 1/2 tsp of thyme and added it to the bread crumbs. And I used italian bread crumbs. All of these things enhanced the flavor and made it a 5 star dish. My family and friends loved this.

Chicken Enchiladas V
This was very good and easy to make. I didn't add the can of green chile peppers because I didn't have them. But I used Campbell's Southwestern Style Pepper Jack soup and instead of cream of chicken soup and it added some extra flavor and heat to make up for it. I also followed what others suggested and used taco seasonings (doubled the amount) instead of chili powder and corn tortillas instead of flour tortillas. It turned out very good. I would definitely make this again.

Brazilian Black Bean Stew
Oh my! This was such a wonderful combination of flavors. We absolutely loved this. My husband said "this is so good" about 10 times while eating it and he rarely comments on food. I would suggest adding one extra mango. We did and it really even could have worked with 3. My only slight complaint was that the prep time (chopping) is long and that the sweet potatoes take much longer than stated to cook until soft. The recipe says it takes 15 minutes to soften the sweet potatoes but it took us over 30 minutes. Still, it was well worth the wait. We will make this again and again!
