Southern Candied Sweet Potatoes

Mine needed to cook much longer than an hour, and they turned out very soupy, not carmelized. I put them in a baking dish and cooked them an additional 20 mins in the oven to cook down the sauce a bit (this after cooking on the stovetop for 1 1/2 hours). The flavor was nice, and they didn't fall apart, but it took too long to cook.

Mojo Roast Chicken (Pollo Asado)

my whole family loved this recipe. I marinated the chicken overnite, and cooked it for 55 minutes, and it turned out very tasty and moist. I will make this again and again. This recipe is a keeper!

Green Chili Rice Casserole

I added adobo seasoning and some chopped garlic, and we still thought it was a little bland. I will try again, but use chicken broth to cook the rice and add some more seasonings, maybe the cumin another reviewer mentioned. Good base recipe, but needs tweaking.

Naan

I am making this for the second time this week- this time for company. My whole family loved these. I also added 1 tbs of the sugar to the yeast mixture and as soon as I did the mixture started to bloom- so I know it needed it! They took longer to cook than I expected, but they were worth it.

Catfish Saint James

My family liked this recipe a lot. The catfish was easy to make, cooked perfectly, and had a really nice flavor. The only problem I had was with the amount of butter. As another reviewer suggested I cut the butter down to 1/4 cup and I thought even that was too much. I would make it again and cut the butter down even more- just a light drizzle would be great. I used 2% milk and thought that was fine.

Chicken with Herb Sauce

The whole family loved this, even my picky 3 and 5 year old kids. I winged the sauce a bit, subbing lemon juice and eyeballing the spices (I used dried). No chives. I also doubled the sauce, and it was wonderful on the spinach I made on the side. Easy weeknight recipe with ingredients I usually have on hand. Thank you for the recipe!

Sour Cream Banana Coffee Cake

This is the second time I've made this cake and it turned out great both times. I doubled the recipe and made it in a 9x13 pan. I also changed the filling to a brown sugar & cinnamon mix b/c we don't like nuts. A great way to use up bananas that are too ripe.

Not Red Spaghetti Sauce

This recipe was good, but I made some modifications to cut down on the fat. I browned the sausage by itself and then drained it, used one Tsp. chicken base and I only added one Tbs. of butter. It really doesn't need the butter, so next time I will omit it entirely or add a little olive oil instead. I may also try adding some garlic next time, but it really had enough flavor as is. This was a hit with the whole family.

Artichoke Mashed Potatoes

Perfect and a nice change from plain mashed potatoes. My son can't have milk so I used soy milk and it was fine. We added a little grated parmesan on top and it was delicious!

I also used about chicken broth (6 cups broth/3 cups water), and left out the jalapeno (too spicy for my kids). It was pretty good, but next time I will use less onion.

Classic Greek Spinach

I gave this 4 stars because it is more work than your average side dish, and it wasn't a hit with the kids. That said, my husband and I really liked it. It tastes better than it looks, and it's a good change of pace. I cut back to 1/4 cup oil, and would use even less next time, also used 2 cloves of garlic, and 1 onion. The lemon and feta are a must!

Pork Tenderloin with Creamy Herb Sauce

This recipe is easy to prepare and tasty. I use fat free 1/2 and 1/2 and add mushrooms. Next time I may add some onions as well. Best made d on a cold day, since it is rich and can be a bit heavy.

Actually Delicious Turkey Burgers

Good recipe, and very easy. I cooked the onion and garlic in a skillet before adding to the mixture, served on buns with a slice of provolone on top, delicious! I will be making this again.

Barbequed Marinated Flank Steak

Very tasty! My whole family, including my picky 22 mo. old loved it. Added about 4 chopped garlic cloves and cut the oil down to 1/4 cup. I will add this to my "favorite recipes".

Artichoke Chicken

This recipe is very quick- and it was a big hit with the whole family. I also used 1/2 mayo and half sour cream, and I also used 8 chicken tenderloins. Served it over noodles. Next time I may try to thin out the mixture a little. This recipe is so rich I won't make it too often, but it's still a keeper.

Garlic Chicken

This was a quick and tasty recipe! I used a lot more garlic than called for, probably about 5 Tbsp. I also doubled the amount of breadcrumbs and parmesan, plus added italian spices to the mix. The chicken was very moist and flavorful.
