Libby's® Famous Pumpkin Pie

I was raised on this pie. This is the exact recipe, right off the can's label, that my mother, grandmother and great-grandmother always baked. I've experimented with many different pumpkin pie recipes and though many have been delicious, THIS is the quintessential Pumpkin Pie Recipe. Stop searching for another, and enjoy this foolproof classic!

Cheeseburger Pasta 'n Vegetables Dinner

Quick, simple, cheap - a great busy weeknight meal. The kids devoured it, and it felt better than giving them a box of mac n' cheese. I used ground turkey instead of beef this time. I'll be using this dish often, I think!

Blue Cheese Potato Salad

I made one small addition only: the oil & vinegar alone wasn't doing it for me so I added about 1 Tbsp of creamy blue cheese dressing to it - that's all - just a dab. This potato salad has become my personal favourite. Wonderful change of pace!

Pizza Casserole

We just love this dish! So delicious, easy, full of flavour. I use ground Italian sausage in place of the ground beef, and sometimes add sliced fresh mushrooms, but all else is exactly as written, right down to the egg noodles. We have had this three times in the past month. A keeper for sure.

Stuffed Peppers with Turkey and Vegetables

Very easy and delicious! No need to purchase extra peppers for the filling, though; chopping up the tops that you've cut off gives you the same amount. You can use red, yellow, orange - whichever colour you prefer! I liked another reviewers suggestion of replacing the canned tomatoes and paste with some Primavera sauce. I served the stuffed peppers with pasta, and we were able to mix the filling that fell out with it to have a scrumptious and nutritious meal that even the kids devoured. Thanks for the recipe!

Bacon Blue Cheese Flat Iron Salad

This is what I have for dinner when the rest of the family want hot dogs! So easy, such amazing flavour. I used a mixture of baby romaine and mache greens, and I omitted the cheddar. I will try this with crumbled goat cheese in ADDITION to the blue cheese, as well. Pair it with a hearty Zinfandel or Cabernet Sauvignon, and your taste buds will thank you!

Chicken and Peppers with Balsamic Vinegar

Fabulous flavour! Chicken and balsamic are the perfect pairing. I cooked the peppers for less time than stated because I prefer them with a bit of "bite" - not mushy. Served it with a pesto pasta. Wonderful, quick, easy.

Butternut Squash Soup with Spinach Ravioli

The leeks were a nice addition to the flavour of this soup, and the kids loved the ravioli in it! No one in my family likes butternut squash the way I do, but the kids devoured this soup! If making it for adults only, you may want to add something for more "kick"... not necessarily spice, but maybe some apple - cooked and pureed with the squash. If I ever make this for company, I will be sure to use Spinach Pasta Ravioli for the contrast of green colour with the bright orange of the soup base. Beautiful and impressive!

Jagerschnitzel

I was looking for a quick, easy weeknight meal with an Octoberfest feel to it and I am glad I found this one! The gravy was so flavourful and delicious. My only changes were to use fresh mushrooms instead of canned, and two packets of boullion. Served it with steak-cut fries and a green salad as suggested, and the whole family enjoyed it. Thanks!

Pork Tenderloin with Mustard Sauce

This mustard sauce is amazing! It reminds me of a wasabi mayo from a local restaurant. I'm not a huge lover of spicy food, but I added closer to 2 Tbsp of mustard powder and thought it was wonderful. It is a perfect accompaniment to this pork tenderloin - even the kids loved it! A definite keeper... Thanks for sharing it!

Pumpkin Turkey Chili

I love this for how quick, easy and nutritious it is. I really liked the flavour, but be warned that it is rather mild - you may want to spice it up a bit. It's great "as is" for kids. I'm sure I'll make it again.

Simple Whole Roasted Chicken

This is only the 2nd time in my life making a whole roasted chicken (because I find them too dry and bland to bother), but after using *this* recipe it may just become a weekly occaision! Not only was this easy to prepare and the flavour outstanding, this was the JUICIEST chicken I have ever eaten - anywhere! I am so impressed with this recipe, I'm going to try this rub/marinade and roasting method with my next holiday turkey. I think roasting it breast-side down may be the key in retaining the flavourful juices. My only changes were to double the spices and add an onion to the cavity with the garlic. Amazing chicken!

Turkey Chili

I can't believe I haven't rated this yet, since I've made it four times! (Anyone who only likes "meat and bean" chilis... find another recipe, please!) I leave the zucchini and summer squash in big chunks, use half broth / half beer in place of the plain water, and simmer this is the crock pot all day. The kids eat it up topped with shredded cheese and with scoop-style tortilla chips. I've even eaten this chili cold the next day - it is SO DELICIOUS! This is a 10-star chili, for sure.

Mexican Rice III

The PERFECT accompaniment to many Mexican dishes. I will definitely make this over and over. I'm sure it would be fantastic exactly as written, and I will one day make it exactly as written, but I had to make a couple of substitutions with what I had on hand; I used a can of green chilies in place of the jalapeno pepper and since I didn't have a fresh tomato I added about 1/2 cup of "salsa verde" with tasty results. Easy, quick, delicious!

Mrs Espy's Enchilada Sauce

While this was simmering, I didn't think this was going to work - or taste very good - but it was wonderful on our beef enchiladas. The only change I made was I used jarred taco sauce in place of the plain tomato sauce. Very easy and delicious. Thanks, Mrs. Espy!

Enchiladas

My son DEVOURED these enchiladas, and my husband declared them fantastic. I had to use ground pork instead of beef, and substituted a blend of Monterey Jack and cheddar cheeses instead of just cheddar. I also used "Mrs. Espy's Enchilada Sauce" from this site instead of canned. This is the beef enchilada recipe I will use from now on. Thank-you!

Baked Potato Soup III

This is a fun soup to make, and the whole family enjoys it. The soup does thicken up considerably the longer it sits, so don't be afraid to thin it out with additional milk. It is a little bland (perfect for kids!) so I added additional salt and pepper, hubby added red chili pepper flakes, and I like the suggestion of a previous reviewer to use some of the bacon grease in the roux for additional flavour so I will try that next time. You could add anything you want to boost the flavour in this recipe! I'll never make plain old potato soup again!

Connoisseur's Casserole

A nice side dish when you need something with a little more substance than just plain green beans. The whole family enjoyed this, and it was very simple to prepare. I left out the almonds this time, but would try them in the future. Great recipe! Thank-you!

Cheesy Stuffed Shells

These were delicous and easy! My daughter ate more than I've seen her eat of anything, and my husband ate TEN of the shells in one sitting, he loved them so much. The filling would be fantastic inside calzones... This recipe is now a family favourite which will be made often. Thank-you for sharing it!
