Pumpkin-Apple Muffins with Streusel Topping
These were soooo yummy! Very, very moist and flavorful- my family devoured them all within a few hours! Like most others, I did make a few very small changes- I used 1/2 whole wheat flour, cut down on the oil by using only 1/4 cup- you DO NOT need a full half cup of oil, and only used 1 1/2 c. sugar. I think the full 2 cups of sugar called for would be too much- mine were plenty sweet, moist and delicious! Also, since the mixture does indeed look dry when you mix it and I already had half a can of pumpkin left over, I stirred in and extra 1/2 c. of pumpkin and a generous splash of milk. I will be making these again soon! P.S. I did not even bother with making the topping- they were great by themselves. Maybe next time.

Bob's Awesome Lasagna
I found this lasagna really yummy and satisfying. I have very high standards and cook almost everything from scratch, so this was a fun one to play with. Like the other reviewers, I used a ricotta/cottage chz combo with an egg, and I also layered in fresh lightly sauteed portobella mushrooms and spinach on top of the ground beef. I also found that an extra can of spaghetti sauce is needed. You can never make lasagna too juicy or saucy in my opinion. You could use a little extra of everything to make the layers really full. I like to make an extra small dish to give to a family member and I like to grate fresh parmesean on it after it's served instead of baking the parm. Tonight I'm going to mix in Italian sausage w/ the beef. Great recipe!

Pumpkin Apple Streusel Muffins
These are good, hearty muffins. I went really healthy and substituted whole wheat flour, used softened real butter and virgin coconut oil for the oil, and date sugar instead of white sugar. I also added a swirl of honey and a few spoonfuls of pure molasses and some raisins. I only had cinnamon so thats the only spice I used, and I left off the struesel topping. Mine are slightly sweet and very moist and smell great. I think made this way they are great for a healthy snack on the go, and great for kids. Good recipe to play with.... I may make the regular version for T-day breakfast!
