Mexican Rice III
The first time I made this, my family really liked it, but since then I have tried to make it again 3 or 4 times and it has been disappointing. Maybe too long cooking, or too high heat, or too little liquid, I don't know! Will look for another recipe :(

Fajita Marinade III
Simple and easy, I use this on both chicken and steak for fajitas and its become a weekly favorite. My 10 year old who previously refused eating mexican food now loves chicken quesadillas made with this marinade.

Italian Spaghetti Sauce with Meatballs
I'm not a big spaghetti fan, but I find myself craving it after having made this recipe a couple times now. The taste is fresh, the sauce is thick, and the meatballs are just perfect. My only change was to use two cans of crushed tomatos because my daughter doesn't like a chunkier sauce. With crushed tomatoes it comes out thick and hearty. Meatballs need no prior cooking or browning, just plunk them in the sauce and they cook to perfection. This is now a once a week family favorite!
